Name: Never-Fail Lard Pastry
Yield: Makes about 3 single 9-inch crusts, or 1 double crust plus 1 single crust
Ingredients: 1 large egg; 1 tsp vinegar; 5 Tbsp cold water; 3 cups all-purpose flour; 1 tsp salt; 1 cup cold lard

A traditional vinegar-and-egg pastry with a tender, flaky texture and enough dough for approximately three single pie crusts.

Yield: Makes about 3 single 9-inch crusts, or 1 double crust plus 1 single crust
