Carob “Cocoa”
¼ cup carob pwd
½ cup water
4 cups milk
⅛ tsp salt
¼ cup honey
1 tsp vanilla
Mix pwd + milk / heat to simmer
Stir in honey + vanilla
blend well — Don’t boil
Beverages
A warm, caffeine-free carob drink gently sweetened with honey and finished with vanilla.
Whisk the carob powder into the water until smooth.
Combine the carob slurry, milk, and salt in a saucepan.
Heat gently, stirring occasionally, until the drink reaches a simmer. Do not boil.
Remove from the heat. Stir in the honey and vanilla, then blend or whisk well before serving.

Christmas Cranberry Punch
24–30 cups
1 cup sugar
1 cup water
4 cups bottled cranberry juice
1 1/2 cups lemon juice
2 cups orange juice
2 cups unsweet. pineapple juice
ice ring
2 bottles (28 oz. ea.) ginger ale
Combine sugar + water. Bring to boil, stirring until sugar dissolves. Cover and boil over low heat w/o stirring for 5 min. Combine syrup and fruit juices. Chill. Add ginger ale at serving time.

A large sparkling holiday punch of cranberry, lemon, orange, and pineapple juices, finished with ginger ale and chilled with an ice ring.
Combine the sugar and water in a saucepan. Bring to a boil, stirring until the sugar dissolves. Cover and boil over low heat without stirring for 5 minutes.
Combine the syrup with the cranberry, lemon, orange, and pineapple juices. Chill thoroughly.
Place the ice ring in a punch bowl. Just before serving, pour in the chilled juice mixture and gently stir in the ginger ale.

Hot Spiced Russian Tea Mix (3½ cups mix)
1 jar Tang (1 lb 2 oz)
½ cup + 3 T plain instant tea
¾ c sugar (or less)
1½ tsp cinnamon
¾ tsp ground cloves.
Use 2 tsp of mix to mug of boiling water.
Beverages
A sweet orange-spice instant tea mix warmly seasoned with cinnamon and cloves.
Stir or whisk all the ingredients together until evenly blended.
Transfer the mix to an airtight container and keep in a cool, dry place.
Stir 2 teaspoons of mix into a mug of boiling water.

Imitation Kahlúa
3 cups water
3 cups sugar
10 Teaspoons Yuban Instant Coffee
4 Teasp. Vanilla
1 quart any kind of vodka
Simmer water, sugar, & instant coffee 1 hour. Let cool, add vanilla and vodka.
Vodka: Use the cheapest
Vodka — makes no difference!
Beverages
A sweet homemade coffee liqueur flavored with instant coffee and vanilla.
Combine the water, sugar, and instant coffee in a large saucepan. Bring to a gentle simmer and cook for 1 hour, stirring occasionally.
Remove from the heat and let the coffee syrup cool completely.
Stir in the vanilla and vodka until thoroughly combined.
Pour into clean bottles or jars, seal, and store in a cool, dark place.

Orange Julius
8–9 ice cubes
1 1/2 c. water
1/2 c. milk
1 tsp. vanilla
1–6 oz. can orange juice
1/3 c. sugar
Blend in blender ’til smooth
optional — 1–2 tsp. Tang
1 egg
ice cream (reduce sugar to 2 Tbsp.)

A frothy homemade Orange Julius-style drink blended from frozen orange-juice concentrate, milk, vanilla, sugar, ice, and water.
Combine the ice, water, milk, frozen orange-juice concentrate, sugar, and vanilla in a blender. Add any optional variation desired.
Blend until completely smooth and frothy. Serve immediately.

2 cups Tang
1 cup sugar
3/4 cup instant tea
3 pkgs. Wylie's lemonade mix (3 oz. size) (already sweetened)
1 tsp. cinnamon

Beverages
A sweet instant orange-lemon tea mix warmly seasoned with cinnamon and cloves.
Stir or whisk all the ingredients together until the powders and spices are evenly distributed.
Transfer the mixture to an airtight container and keep in a cool, dry place.
Stir 2 teaspoons of mix into 1 cup hot water, using a little more or less mix to taste.

WASSAIL
Use a claret or bordeaux—
1 cup sugar
4 inches stick cinnamon
3 lemon slices
1/4 cup water
6 cups dry red wine
2 cups unsweetened pineapple juice
2 cups orange juice
1 cup dry sherry
In small saucepan, combine sugar, cinnamon, lemon slices, and water. Cook and stir for 3 to 5 minutes or till sugar dissolves. Strain to remove spices and fruit; keep warm. In large saucepan, heat, but do not boil remaining ingredients. Combine with spiced syrup. Ladle into warm mugs. Garnish with additional lemon slices, if desired, and serve immediately. Makes 12 cups.

A warm party bowl of dry red wine, sherry, pineapple and orange juices, sweetened with a lemon-cinnamon syrup.
Combine the sugar, cinnamon stick, 3 lemon slices, and water in a small saucepan. Cook and stir over medium heat for 3–5 minutes, until the sugar dissolves.
Strain out the cinnamon and lemon, then keep the syrup warm.
In a large saucepan, gently heat the red wine, pineapple juice, orange juice, and sherry without allowing the mixture to boil.
Stir in the warm spiced syrup. Ladle into warmed mugs, garnish with additional lemon slices if desired, and serve immediately.

BUTTERMILK DOUGHNUTS
An exceptionally light doughnut—
2 eggs
1 cup granulated sugar
1/4 cup cooking oil
1 teaspoon vanilla
4 cups all-purpose flour
4 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
1 cup buttermilk
Cooking oil for deep frying
Powdered sugar
Beat eggs till thick and lemon-colored. Add the granulated sugar and beat till smooth. Stir in the 1/4 cup cooking oil and the vanilla. Thoroughly stir together dry ingredients. Add to egg mixture alternately with buttermilk. Turn out onto a lightly floured surface and roll to 1/2-inch thickness. Cut with a floured doughnut cutter. Fry in deep hot oil (375°) till golden brown, about 3 minutes, turning once. Drain on paper toweling. Serve plain or sprinkled with powdered sugar. Makes 24 doughnuts.

Exceptionally light, old-fashioned buttermilk doughnuts, fried until golden and served plain or dusted with powdered sugar.
Beat the eggs until thick and pale yellow. Add the granulated sugar and beat until smooth. Stir in the 1/4 cup oil and vanilla.
In a separate bowl, thoroughly combine the flour, baking powder, salt, and baking soda.
Add the dry ingredients to the egg mixture alternately with the buttermilk, mixing until a dough forms.
Turn the dough onto a lightly floured surface and roll it 1/2 inch thick. Cut with a floured doughnut cutter.
Heat the frying oil to 375°F. Fry the doughnuts until golden brown, about 3 minutes total, turning once.
Drain on paper towels. Serve plain or dusted with powdered sugar.

Fresh-milk aebleskiver
1 1/4 c. flour
1/2 t salt
2 1/4 t bk pwd
2 T sugar
1/2 t cardamom or cinnamon
1 egg, beaten
1 cup milk
about 6 T melted butter
pwd sugar
jams or preserves
Combine dry ingred. Beat together egg, milk & 2 T melted butter. Stir all until blended.
Over med. heat until water sprinkled sizzles. Brush w. butter. Fry.
12–15 balls.

Fresh-milk Danish pancake balls flavored with cardamom or cinnamon and served with powdered sugar and preserves.
Combine the flour, salt, baking powder, sugar, and cardamom or cinnamon in a mixing bowl.
In a separate bowl, beat together the egg, milk, and 2 tablespoons of the melted butter.
Add the wet ingredients to the dry ingredients and stir just until blended.
Heat an æbleskiver pan over medium heat. It is ready when a sprinkling of water sizzles on the surface.
Brush the wells of the pan with some of the remaining melted butter.
Spoon batter into the wells. Cook until the bottoms are golden and the edges begin to set. Turn the æbleskiver and continue cooking, turning as needed, until evenly browned and cooked through.
Serve warm with powdered sugar and jam or preserves.

Fresh Orange Marmalade
3 oranges
1 cup honey
1 tsp. Vanilla
Scrub oranges with a stiff brush under running
water. Add several strips of peel to saucepan. Discard
the rest of peel. Dice, add pieces + juice to saucepan
Add h + v. warm thoroughly. Serve in small
scalded pitcher for waffles pancakes muffins
cottage cheese yogurt - opt add 1/4 cup pineap. or a fresh
peach
Breakfast & Brunch
A quick, pourable orange topping sweetened with honey and flavored with vanilla, served warm with breakfast breads or dairy.
Scrub the oranges thoroughly under running water with a stiff brush.
Remove and reserve several strips of orange peel. Discard the remaining peel.
Dice the peeled oranges, retaining their juice.
Place the reserved peel, diced oranges, and collected juice in a saucepan.
Add the honey and vanilla. Warm thoroughly without bringing the mixture to a hard boil.
Serve warm from a small, scalded pitcher with waffles, pancakes, or muffins.
Alternatively, serve with cottage cheese or yogurt. If desired, add either 1/4 cup pineapple or one fresh peach.

German Apple Pancakes (Pannekuchen)
lemon wedges
3 eggs; 1/2 C flour; 1/2 cup milk; 1 T sugar; 1/2 t salt; 1 green apple; 3 T butter; 1 t cinnamon; 3 T sugar
Slightly beat eggs, mix in flour, milk, sugar and salt. Beat just until smooth. Set aside while you saute sliced apple in butter in 10–12" skillet w/ slant sides. Add batter to hot skillet and place in preheated 425° oven, lower rack, for 5 min. Remove and quickly sprinkle cinnamon mix over mixture. Return to 475° oven for 5–7 more min. Serve w/ lemon wedges.
Breakfast & Brunch
A skillet-baked apple pancake with a cinnamon-sugar finish and lemon wedges.
Lightly beat the eggs. Add the flour, milk, 1 tablespoon sugar, and salt; beat just until smooth.
Melt the butter in a 10–12-inch oven-safe skillet with sloping sides and sauté the sliced apple.
Pour the batter into the hot skillet and bake on the lower rack at 425°F for 5 minutes.
Mix the cinnamon with 3 tablespoons sugar. Working quickly, sprinkle it over the pancake and return to the 425°F oven for 5–7 minutes, until puffed, browned, and set. Serve with lemon wedges.

Grandfather's Breakfast Casserole
Grease a casserole with margarine. 13 x 9 x 2". Tear 4 slices bread into casserole. Spread with one pound broken sausage, cooked & drained. Sprinkle with one cup grated cheese.
6 eggs
2 cups milk
1 tsp salt
pepper
1 tsp dry mustard
Beat together and pour over all. Refrigerate overnight.
Bake at 350° 35 or 40 min. Garnish with parsley. Serves 6–8.
Breakfast & Brunch
An overnight breakfast casserole layered with bread, savory breakfast sausage, grated cheese, and a dry-mustard egg custard.
Grease a 13 × 9 × 2-inch baking dish with margarine. Arrange the torn bread evenly in the dish.
Cook the bulk breakfast sausage in a skillet, breaking it into pieces. Drain well, spread it over the bread, and sprinkle the grated cheese over the sausage.
Beat together the eggs, milk, salt, pepper, and dry mustard. Pour evenly over the casserole.
Cover and refrigerate overnight.
Heat the oven to 350°F. Bake for 35–40 minutes, until the center is set. Garnish with parsley and serve hot.

High Protein Pancakes or Waffles
Combine in mixing bowl or blender:
1 cup cottage cheese
4 eggs
1/2 c flour
1/4 t salt
1/4 c oil
1/2 c milk
1/2 t vanilla
Bake on lightly greased griddle or waffle iron.
Serves 3.
Breakfast & Brunch
Tender cottage-cheese pancakes or waffles with eggs for extra protein.
Combine the cottage cheese, eggs, flour, salt, oil, milk, and vanilla in a mixing bowl or blender. Mix or blend until well combined.
Lightly grease and preheat a griddle or waffle iron.
Portion the batter onto the hot griddle. Cook until the edges are set, then turn and cook the second side until golden and cooked through.
Add the appropriate amount of batter to the waffle iron and cook according to the appliance’s directions.

Yogurt
Heat one quart of non-instant powdered milk to boiling. Cool so you can just put your finger in the milk w/out burning it. Pour it into a jar w/ a good size TBS. of store bought plain yogurt. Screw top on tight and wrap a towel around it for insulation for eight hours. Refrigerate → eat w/ flavoring.
— Cheese — add one + 1/2 teaspoon salt to the milk at heating stage. after 8 hrs period, empty into jelly bag for another eight so it can drain. → eat.
Breakfast & Brunch
Homemade yogurt cultured from reconstituted non-instant powdered milk.
Heat the reconstituted milk to 185–200°F, stirring to prevent scorching.
Cool to 112–115°F. Blend the starter with a little warm milk, then stir it into the remaining milk in a clean heat-safe jar.
Cover and hold at 112–115°F for 4–8 hours, until set and tart. Refrigerate immediately.

Mock Eggs Benedict
Mix in large baking dish - 2 cans cream of chicken soup
2 slices chopped onion
1/2 can (large size) evaporated milk
Break over - 10 eggs. Top with grated
cheeses. Butter 10 slices sourdough bread. Sprinkle
with garlic salt. Line sides of baking dish with
bread. Bake at 350° - 30 min. To serve - put
on toast on plate. Top with egg & some sauce.
Delishious with 1/2 milk 1/2 white wine!
Breakfast & Brunch
Eggs baked over a creamy chicken-soup sauce, topped with cheese and served on buttery, garlic-seasoned sourdough toast.
Heat the oven to 350°F.
In a large baking dish, combine the cream of chicken soup, chopped onion, and evaporated milk.
Break the eggs over the sauce, keeping them separate. Top with grated cheese.
Butter the sourdough slices and sprinkle them with garlic salt. Arrange the bread around the sides of the baking dish.
Bake for about 30 minutes, until the eggs are set to the desired doneness and the dish is heated through.
To serve, place a piece of toast on each plate and top it with an egg and some of the sauce.

Never Fail Quiche
1) Saute' and drain:
4 to 6 slices bacon
1/2 med. onion or green onions
finely diced
2) grate: 2 cups cheese (cheddar, swiss or jack)
3) Put in blender approx 1 minute:
4 eggs
1/4 c. milk
half the grated cheese
1 - 10 oz can mushroom soup
1 tsp salt or seasoned salt
4) fill pastry shell with bacon and onion.
Add egg mixture and top with remaining
Cheese. Garnish with parsley.
Bake 425° for 35-45 minutes
Allow to stand 5 min. before cutting
Variations:
1/2-1 cup mushrooms
1 cup zucchini, grated
1 cup drained cooked spinach
Breakfast & Brunch
A rich, savory quiche with bacon, onion, mushroom soup, and plenty of cheese, with optional vegetable variations.
Heat the oven to 425°F.
Cook the bacon and onion in a skillet until the bacon is cooked and the onion is tender. Drain well.
Shred the cheese and reserve half for topping the quiche.
Place the eggs, milk, mushroom soup, salt or seasoned salt, and half of the cheese in a blender. Blend for about 1 minute, until evenly combined.
Spread the drained bacon-and-onion mixture in the pastry shell. If using one of the vegetable variations, distribute it evenly over the bacon mixture.
Pour in the egg mixture. Top with the remaining cheese and garnish with parsley, if desired.
Bake for 35–45 minutes, until the filling is set near the center and the top is browned.
Let the quiche stand for 5 minutes before cutting.

Thin, tender Swedish-style pancakes cooked in a buttered skillet. Recipe courtesy of Jan Swanson.
Beat together the milk, flour, and eggs until smooth.
Beat in the melted butter, sugar, and salt until evenly combined.
Heat a skillet over medium heat and butter it lightly.
Spread a thin layer of batter across the hot skillet. Cook until browned underneath, then flip and brown the second side. Repeat with the remaining batter, buttering the skillet as needed.

Youghurt Ebleskiver
500 g flour
1 T sugar
1 t salt
4 eggs
about 8 dl milk (or 5 dl yoghurt and 3 dl milk)
2 tsp natron (10 g)
Breakfast & Brunch
Yogurt æbleskiver made with a lightly sweetened, baking-soda-leavened batter.
Combine the flour, sugar, salt, and baking soda in a mixing bowl.
In a separate bowl, beat the eggs with the yogurt and milk.
Add the wet ingredients to the dry ingredients and stir just until blended.
Heat an æbleskiver pan over medium heat. It is ready when a sprinkling of water sizzles on the surface.
Brush the wells of the pan with butter.
Spoon batter into the wells. Cook until the bottoms are golden and the edges begin to set. Turn the æbleskiver and continue cooking, turning as needed, until evenly browned and cooked through.

Apple Walnut Bread

makes 1 loaf
Serves (large)
3 c. sifted flour (with half of it whole wheat)
3/4 c. sugar
3 tsp. baking powder
1 tsp. salt
3 tsp. cinnamon
2 cups diced pared apples
1/2 cups finely chopped walnuts
1 egg, 3/4 cup milk, 3 Tblsp. veg. shortening
Sift flour, sugar, baking powder, salt, and cinnamon together. Mix together egg, milk and shortening; add this mixture to dry ingredients. Mix in apples and nuts — it will be thick.
Pour in loaf pan or bundt pan. Bake 350° 50–55 min.

Breads, Muffins & Crusts
Ruth Walker's cinnamon-spiced apple and walnut quick bread, baked as one large loaf with a notably firm crust.
Heat the oven to 350°F. Grease a large loaf pan or Bundt pan.
Sift or whisk together the all-purpose flour, whole-wheat flour, sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk together the egg, milk, and melted shortening. Add the wet mixture to the dry ingredients and stir just until combined. Fold in the diced apples and walnuts. The batter will be thick.
Spread the batter in the prepared pan. Bake for 50–55 minutes, until the loaf is set and a tester inserted near the center comes out clean.
Let the bread cool briefly in the pan before turning it out to finish cooling. Expect a firm crust.

Banana Nut Bread
1 cup sugar
1/2 cup shortening
3 bananas mashed
1/2 teaspoon soda
2 eggs
1 cup nuts (more or less; or optional)
2 cups flour
vanilla (to taste: I like lots - 2 teaspoons or more)
Cream sugar and shortening.
Add bananas and soda; mixed together.
Add eggs and flour, alternately; then vanilla; and nuts.
Bake at 350°F. for about 1 hour, 15 minutes, or until toothpick stick through middle to bottom comes out clean.
Note: This may be made in 2 pans, one medium- and one small-sized.
Frosting for Banana Nut Bread
1 box powdered sugar
1 cube butter (the whole thing; don't cheat!)
2-3 teaspoons vanilla flavoring
(and/or any other flavoring you like; as ‘mandarino’)
Be sure butter is not chilled. Mix together, adding half and half (or milk or cream) until a good consistency for spreading.
(enough for 1 1/2 to 2 recipes)

A generously vanilla-scented banana nut bread with a soft, old-fashioned butter frosting.
Heat the oven to 350°F. Grease a 9 x 5-inch loaf pan, or one medium and one small loaf pan.
Cream the sugar and shortening until evenly blended. Stir the baking soda into the mashed bananas. Add the banana mixture to the creamed mixture. Beat in the eggs one at a time, alternating with additions of the flour. Stir in the vanilla and, if using, the nuts.
Transfer the batter to the prepared pan or pans. Bake a large loaf for about 1 hour 15 minutes, until a toothpick inserted through the center to the bottom comes out clean. Begin checking smaller loaves earlier.
Let the bread cool in the pan briefly, then turn it out and cool completely before frosting.
Beat the powdered sugar, softened butter, and vanilla together. Add half-and-half, milk, or cream a little at a time until the frosting reaches a smooth spreading consistency. Spread over the cooled bread.

Double Apple Muffins
1 cup flour
1 cup Whole Wheat flour
1/2 cup sugar
2 Tbs wheat germ
1 Tbs baking powder
1/4 t. nutmeg
1 cup (1 small) finely chopped, peeled, apple
1/2 cup raisins, if desired
1 cup apple juice
1/3 cup oil
1 egg, beaten
Heat oven to 400°. Line with paper baking cups or generously grease 12 muffin cups. Lightly spoon flour into measuring cups; level off. In large bowl combine all purpose flour, whole wheat flour, sugar, wheat germ, baking powder and nutmeg. Add apples and raisins. Stir in apple juice, oil and egg until moistened. Spoon batter into prepared muffin cups filling 3/4 full. Bake at 400°F. for 20 to 25 minutes or until golden brown. Immediately remove from pans. Serve warm. 12 to 14 muffins.

Tender whole-wheat apple muffins made doubly apple-rich with chopped fresh apple and apple juice, with optional raisins.
Heat the oven to 400°F. Line 12 muffin cups with paper liners or grease them generously.
Lightly spoon both flours into measuring cups and level them off. In a large bowl, combine the all-purpose flour, whole-wheat flour, sugar, wheat germ, baking powder, and nutmeg.
Add the chopped apple and optional raisins to the dry ingredients. Stir in the apple juice, oil, and beaten egg just until the dry ingredients are moistened.
Divide the batter among the prepared muffin cups, filling each about three-quarters full. Bake for 20–25 minutes, until golden brown.
Immediately remove the muffins from the pan and serve warm.

2 1/3 c ww flour
1/2 c bran
1/2 t salt
3/4 t soda
1 T + 2/3 t sugar
1 c bananas
1 c milk
1 egg
1/4 c honey
1 T + 2 t butter
1/2 c raisins
15–20 min
400°
or microwave 3–4 min

Whole-wheat banana-bran muffins lightly sweetened with honey, with optional raisins.
Heat the oven to 400°F. Grease or line a 12-cup muffin pan.
In a large bowl, cream the softened butter with the sugar and honey until evenly combined. Beat in the egg, then mix in the mashed banana.
In a separate bowl, sift or whisk together the whole-wheat flour, bran, salt, and baking soda.
Stir the dry ingredients into the banana mixture alternately with the milk, mixing only until combined. Fold in the optional raisins.
Divide the batter among the prepared muffin cups. Bake for 15–20 minutes, until the muffins are set and a tester inserted near the center comes out clean.

3/4 c. salad oil
2 eggs (well beaten)
1 t. vanilla
1 t. soda
1 t. cinnamon
1 1/2 c. flour
Bake in loaf pan, 1 hr 350°

Kathy Palcic's simple cinnamon-scented carrot quick bread, mixed with oil for a moist, tender loaf.
Heat the oven to 350°F. Grease a loaf pan.
In a large bowl, stir together the grated carrots, sugar, oil, beaten eggs, and vanilla. Add the baking soda, cinnamon, and flour; stir just until evenly combined.

Make Ahead - Oatmeal Bread

2 pkgs dry yeast
1 1/2 cups boiling water
1 cup quick oats
1/3 cup light molasses
1/3 cup shortening
1 Tbsp. salt
3 cups whole wheat flour
3 1/2 cups white flour
2 slightly beaten eggs
(for a higher protein bread substitute 1 cup of rye flour for a cup of white or wheat flour and/or 1/2 cup soy flour for one/half of white or wheat)
Soften yeast in 1/2 cup warm water. In large bowl combine boiling water, oats, molasses, shortening & salt.
Stir in 2 cups of flour; beat; add eggs; beat.
Stir in yeast; beat.
Add remaining flour. Stir vigorously 10 min.
(May knead, but not necessary.) Cover, place in refrig. 2 hours or over night.
Shape into 2 loaves. Place in 8 1/2 × 2 1/2 pans.
Cover. Let rise 2 hours. Bake 375° 40 min.

Stir the yeast into the 1/2 cup warm water and let stand until foamy.
In a large bowl, combine the boiling water, oats, molasses, shortening, and salt. Let cool until lukewarm so the mixture will not harm the yeast.
Beat 2 cups of the flour into the oat mixture. Beat in the eggs, then the bloomed yeast. Add the remaining flour and stir vigorously for 10 minutes. The source notes that the dough may be kneaded, but need not be.

Nebraska Bran Muffins
1. Mix & let stand — 3 cups bran flakes, 1 cup boiling water.
2. Beat in medium bowl & add to bran — 2 eggs, 1¼ cups sugar or 1 cup honey, 2 cups buttermilk, and ½ cup oil.
3. Sift together & fold into bran — 2 cups whole wheat flour plus ½ cup soy flour, 2½ tsp soda, ½ tsp salt.
Bake 375° for 15 min. in a greased muffin tin.
May be refrigerated in covered jars for weeks!

A traditional vinegar-and-egg pastry with a tender, flaky texture and enough dough for approximately three single pie crusts.
Beat the egg in a small bowl. Mix in the vinegar, followed by the cold water, preserving the source’s specified order. Keep cold.
Whisk together the flour and salt in a large bowl.
Add the cold lard and cut it into the flour with a pastry blender, two knives, or your fingertips until the mixture resembles coarse crumbs with some pea-size pieces remaining.
Pour the egg mixture over the flour mixture. Toss gently with a fork until the dough begins to hold together. Avoid kneading or overmixing.
Turn the dough onto a lightly floured surface and bring it together gently. Divide it into three equal portions and shape each into a disk.
Wrap the disks and refrigerate for at least 30 minutes before rolling.
Roll each disk on a lightly floured surface into a circle about 2 inches wider than the pie plate. Transfer it to the plate without stretching.
Trim and finish the edge as needed, then fill or bake the crust according to the pie recipe being used.

1 cup cornmeal

Shape dough in a ball; place in lightly greased bowl, turning once to grease surface. Cover; let rise in warm place till double (about 1 1/2 hrs). Punch down. Cut into 2 portions; shape each in smooth ball. Cover and let rest 10 minutes.

A lightly sweetened whole-wheat yeast bread with a tender crumb and traditional hand-kneaded method.
Stir the yeast into the 1/4 cup warm water and let stand until foamy, 5 to 10 minutes.

1 packet dry yeast

Make a well in dry. add oil + yeast. Rubbing motion. Work into soft smooth dough. Add warm water as necessary until dough drips.
No lumps — Raise to double size. Cover pan. Blanket from draft. 90–160 min.
Anchovies — add oil into dough. Put in anchovie; work round. Oil hot (boil). Squeeze — fall into hot oil. Flip once. Brown bag to drain. May keep in oven hot.

Soft Italian fried dough made plain or wrapped around pieces of anchovy.
Dissolve the yeast in 1 cup warm water. Make a well in the flour and salt; add the yeast mixture and olive oil. Work together, adding warm water until smooth, lump-free, very soft, and loose enough to droop from the hand.
Cover and protect from drafts. Let rise until doubled, approximately 90–160 minutes.
Heat several inches of frying oil in a deep heavy pot to about 350°F.
With a lightly oiled hand, squeeze small portions between thumb and forefinger into the oil. For anchovy zeppole, enclose a piece of anchovy in each portion first.
Fry in small batches until puffed and golden, turning once. Drain on brown paper or paper towels and serve hot; hold briefly in a 200°F oven if needed.

2 c. grated zucchini

3/4 c. honey

A warmly spiced two-loaf zucchini bread sweetened with both sugar and honey, with raisins and plenty of chopped nuts.
Heat the oven to 350°F. Grease and flour two loaf pans.
In a large bowl, mix the grated zucchini, eggs, oil, sugar, honey, and vanilla until evenly combined.
In another bowl, sift or whisk together the flour, salt, baking soda, baking powder, cinnamon, and nutmeg. Add the dry ingredients to the zucchini mixture and stir just until combined. Fold in the raisins and chopped nuts.

¼ C light karo syrup
¼ C Sugar
½ Block margarine
¼ C salad oil
1 Tablespoon shoyu
Heat above mixture until sugar is dissolved.
Pour over 1 Box (12oz) Crispix cereal in large pan and mix well.
Sprinkle ½ cup of Furikake and mix well.
Spray Pam in Large Flat pan. Spread cereal mix.
Bake in 250° oven for 1 hour. Mix every 15 minutes.

Crispix cereal baked slowly in a sweet, savory shoyu glaze and seasoned generously with furikake.
Heat the oven to 250°F. Coat a large, flat baking pan with nonstick cooking spray.
Combine the corn syrup, sugar, margarine, oil, and shoyu in a saucepan. Heat gently, stirring, until the sugar dissolves and the mixture is uniform.
Place the Crispix in a large mixing pan or bowl. Pour the warm glaze over it and mix well. Sprinkle with the furikake and mix again until evenly distributed.
Spread the cereal mixture in the prepared pan. Bake for 1 hour, stirring thoroughly every 15 minutes.

Combine the chopped eggs, olives, green onions, mustard, and mayonnaise. Cover and refrigerate.
Cut each sandwich loaf horizontally into three even layers.
Lightly butter all exposed cut surfaces of the bread. This helps prevent the moist fillings from soaking into the loaf.
Spread one filling between the bottom and middle layers and the other filling between the middle and top layers. Reassemble each loaf, keeping the layers aligned.
Beat the softened cream cheese with the milk until smooth and fluffy.
Cover the top and sides of each assembled loaf with the cream-cheese frosting. Garnish with parsley.
Wrap the frosted loaves loosely and refrigerate until thoroughly chilled and firm enough to slice.

Wrap each roll in foil and refrigerate until firm.

3/4 c. sesame seeds
1 c. flour
1 tsp. salt
dash cayenne pepper or paprika
1/3 c. oleo or butter

Cut cold oleo into dry ingred., as for pie crust; add water to make dough.
Roll out to 1/8" thick & cut round or square. Bake on greased sheet 350° / 20 min.
Sprinkle with salt while still hot.

Crisp, savory sesame crackers seasoned with cayenne or paprika and finished with salt while hot.
If the sesame seeds are raw, toast them in a dry skillet for a couple of minutes, stirring frequently. Allow them to cool. Seeds that are already roasted may be used as-is.
Heat the oven to 350°F. Lightly grease a baking sheet.
Combine the sesame seeds, flour, salt, and cayenne or paprika.
Cut the cold butter or margarine into the dry ingredients as for a pie crust. Add the ice water and mix just until a dough forms.
Roll the dough to 1/8-inch thickness and cut it into rounds or squares.
Arrange the pieces on the prepared baking sheet and bake for about 20 minutes.
Sprinkle with additional salt while still hot.

A savory-sweet tofu and peanut-butter spread flavored with honey, lemon, and either miso or salt. Serve it with bread or crackers.
Place the well-drained tofu in a bowl and mash it thoroughly with a fork.
Add the peanut butter, honey, lemon juice, and either the miso or salt.
Continue mashing and stirring until the spread is evenly mixed. Leave it slightly textured or mash it smoother, as desired.
If desired, stir in the raisins and either peanuts or sunflower seeds.
Serve with bread or crackers. Cover and refrigerate any remainder.

heat; 2-3 min per side. Makes 5 sands.

Whole-wheat sandwiches filled with creamy tuna, cheddar, blue cheese, mushrooms, and onion, dipped in a Parmesan egg mixture and browned on a griddle.
In a bowl, combine the mayonnaise, Worcestershire sauce, mustard, salt, and Tabasco.
Stir in the drained tuna, cheddar, blue cheese, mushrooms, and onion until evenly combined.
Divide the tuna filling among five slices of whole-wheat bread. Top with the remaining bread to make five sandwiches.
In a shallow dish, whisk together the beaten egg, milk, and Parmesan.
Briefly dip both sides of each sandwich in the egg mixture, allowing any excess to drain back into the dish.
Heat a buttered or nonstick griddle over medium-low heat. Cook the sandwiches for 2–3 minutes per side, until golden brown, the egg coating is cooked, and the filling is hot.

Thin, crisp homemade crackers made from whole-wheat flour and a simple hot-water dough.
Heat the oven to 325°F. Have ungreased baking sheets ready.
In a mixing bowl, stir together the whole-wheat flour, all-purpose flour, sugar, and salt.
Add the vegetable oil and mix thoroughly.
Pour in the boiling water and mix again until a cohesive dough forms. Allow it to stand just until cool enough to handle.
Working with a small ball of dough at a time, roll it on an unfloured counter until extremely thin and nearly translucent.
Carefully transfer the thin dough to an ungreased baking sheet. Cut or score it into cracker-size pieces before baking, or leave it whole and break it into rustic pieces afterward.
Bake for 6–8 minutes, or until golden brown. Watch closely because very thin areas may brown first.
Let the crackers cool completely so they become crisp.

Yogurt
Heat one quart of non-instant powdered milk to boiling. Cool so you can just put your finger in the milk w/out burning it. Pour it into a jar w/ a good size TBS. of store bought plain yogurt. Screw top on tight and wrap a towel around it for insulation for eight hours. Refrigerate → eat w/ flavoring.
— Cheese — add one + 1/2 teaspoon salt to the milk at heating stage. after 8 hrs period, empty into jelly bag for another eight so it can drain. → eat.

Salted homemade yogurt strained until thick and spreadable.
Heat the milk to 185–200°F, stirring to prevent scorching. Cool to 112–115°F, stir in the yogurt starter, cover, and hold at 112–115°F for 4–8 hours, until set and tart.
Stir the salt into the cultured yogurt.
Transfer to a clean jelly bag or cheesecloth-lined strainer and drain in the refrigerator for about 8 hours, until thickened to the desired consistency.
Transfer to a covered container and refrigerate.

2 7 oz cans tuna
1 10 oz pkg frozen peas
1 cup chow mein noodles
1/2 cup toasted nuts
3/4 cup mayonnaise

1/8 tsp garlic salt
Drain tuna, cook and drain peas, combine
peas, celery & tuna, cover & chill. Combine
mayonnaise, lemon, curry & garlic - chill.
Add noodles to tuna & toss; add mayon-
naise, mix & toss again. Serve on
greens with nuts. For variety add
cocktail onions, sliced radishes, stuffed
olives or sliced green onions.

A chilled curried tuna-and-pea salad with celery and chow mein noodles, served over greens with toasted nuts.
Cook the frozen peas according to the package directions. Drain and let cool.
In a bowl, combine the drained tuna, cooled peas, and sliced celery. Cover and refrigerate until chilled.
In a separate bowl, stir together the mayonnaise, lemon juice, curry powder, and garlic salt. Cover and refrigerate until chilled.
Add the chow mein noodles to the tuna mixture and toss gently.
Add the chilled dressing and toss again until evenly coated.
Arrange the salad on a bed of greens and sprinkle with the toasted nuts.

1/4 lb. carrots
1 small clove garlic, finely crushed and peeled
salt/pepper
1/4 tsp oregano
1 T red wine vinegar
oil to cover
Peel carrots, cut into 2" lengths, cook in boiling
salted water until firm/tender (10-12 min)
Drain, cut lengthwise; place in dish.
Bury garlic among carrots. Add salt and
pepper, oregano, vinegar, and cover with
oil. Refrigerate overnight. Serve at
room temperature

Firm-tender carrots marinated overnight with garlic, oregano, red wine vinegar, and olive oil, then served at room temperature.
Peel the carrots and cut them crosswise into 2-inch lengths.

Drain the carrots, then cut each piece lengthwise. Arrange them in a shallow dish.
Tuck the crushed garlic among the carrots. Season with salt, pepper, and oregano, then add the red wine vinegar.
Pour in enough olive oil to cover the carrots.

Thinly sliced cucumbers and canned crab or shrimp marinated in a sweet vinegar, mirin, and shoyu dressing, finished with lemon zest.
Combine the sliced cucumbers with the drained crabmeat or shrimp.
In a small bowl, stir together the vinegar, sugar, mirin, and shoyu until the sugar dissolves.
Pour the marinade over the cucumber and seafood mixture. Toss gently to coat.
Cover and refrigerate for 1 hour.

This sweet-tart salad uses raspberry gelatin, orange
juice, cranberry sauce, and whipping cream—
2 1/2 cups orange juice
1 16-ounce can whole cranberry sauce
1 6-ounce package raspberry-
flavored gelatin
1 1/2 cups whipping cream
In saucepan combine 1 1/4 cups of the
orange juice, cranberry sauce, and
gelatin. Cook and stir over medium heat
till gelatin dissolves. Stir in remaining

A molded sweet-tart cranberry and raspberry gelatin salad lightened with softly whipped cream and flavored with orange juice.
In a saucepan, combine 1 1/4 cups of the orange juice, the cranberry sauce, and the raspberry gelatin.
Cook over medium heat, stirring continuously, until the gelatin is completely dissolved. Do not boil.
Stir in the remaining 1 1/4 cups orange juice, then transfer the mixture to a bowl.
Cover and refrigerate until partially set, with the consistency of unbeaten egg whites.
In a separate bowl, whip the cream to soft peaks.
Gently fold the whipped cream into the partially set gelatin mixture. Cover and refrigerate until the mixture thickens enough to mound when spooned.
Spoon into a Jel-Ring mold or comparable ring mold. Cover and refrigerate for 4–6 hours, until firmly set.
Immerse the outside of the mold in warm water for 20–30 seconds, taking care not to melt the gelatin. Place an inverted serving plate over the mold, hold them together securely, and invert. Carefully lift off the mold.
If desired, fill the center with orange wedges and garnish with additional whipped cream, cranberries, and orange leaves. Serve chilled.

Cucumber Sunomono
2 cukes
1 small mikan
Sauce:
2 T vinegar
1 T sugar
1 T mirin
1/4 t shoyu
Wash cucumber and chop off each end; Slice thin. Peel mikan & remove membrane and skin. Mix sauce. Add cuke & then mikan. Let stand 1 hr or so. Serve small bowls.

A light Japanese-style cucumber salad with mikan segments in a sweet-tart rice vinegar, mirin, and shoyu dressing.
Trim both ends from the cucumbers and slice them thinly.
Peel the mikan, separate the segments, and remove the segment membranes and any remaining skin.
Stir together the rice vinegar, sugar, mirin, and shoyu until the sugar is dissolved.
Add the sliced cucumber to the sauce, then gently fold in the mikan.
Let stand for about 1 hour, then serve in small bowls.

A colorful mixture of buttery red potatoes, tender-crisp vegetables, and fresh peppers tossed with a citrus-curry yogurt dressing. Serve it chilled on lettuce or slightly warm.
Melt the butter in a large skillet over medium heat. Add the diced potatoes and cook, stirring regularly, until tender and lightly browned. Reduce the heat or cover the skillet as needed so the potatoes cook through without burning.
Steam or blanch the cauliflower, green beans, and asparagus separately until just tender-crisp. Drain well.
If serving the salad cold, allow the potatoes and cooked vegetables to cool completely. If serving it warm, allow them to cool slightly so they are warm rather than piping hot.
Whisk together the yogurt, 1 teaspoon citrus zest, 1 tablespoon citrus juice, and curry powder. Taste and add more zest or juice as desired.
Combine the potatoes, cauliflower, green beans, asparagus, green pepper, and red pepper. Fold in the curry dressing. Add broccoli, cooked chicken, or onion if desired.
Serve chilled on lettuce leaves, or serve slightly warm.

Island Pineapple for Barbeques
Select ripe pineapple. Quarter w/
peel. Cut into 8 segments.
Place in large pan, marinate w/
3 T honey. Marinate 1 hour, until
coated. Place skin side down over
hot coals (3-4" away) grill

Honey-marinated pineapple wedges grilled peel-side down over hot coals until juicy and lightly caramelized.
Leaving the peel attached, quarter the pineapple lengthwise. Remove the core as needed, then cut the quarters into eight wedges total.
Arrange the pineapple wedges in a large shallow pan. Drizzle with the honey and turn to coat.
Let the pineapple marinate for 1 hour, turning occasionally so it remains evenly coated.
Prepare a charcoal grill with hot coals. Arrange the pineapple skin-side down on the grate, approximately 3–4 inches above the coals.
Grill for 15–20 minutes, until heated through, juicy, and lightly caramelized. Serve warm.

Marinated Vegetables

2/3 cp vinegar
2/3 cp olive or salad oil
1/4 cp chopped onion
2 cloves garlic, minced
1 tsp sugar
1 tsp dried basil, crushed
1 tsp dried oregano, crushed
8 oz. fresh mushrooms, halved or qtrd.
1/2 cp pitted ripe olives, halved
1 sm head cauliflower
(or 2 bunches broccoli)
1 tsp salt
1/4 tsp pepper
Parboil the broccoli & cauliflower.
Drain.
In saucepan combine vinegar, oil, onion,
garlic, salt, sugar, basil, oregano & pepper.
Bring to boiling. Simmer uncovered 10 min.
Combine remaining ingredients in bowl. Pour
hot marinade over vegetables. Stir to coat.
Cover; chill several hours, stirring occasionally.

Crisp-tender cauliflower or broccoli with mushrooms and ripe olives in an herb-seasoned vinaigrette, chilled for several hours before serving.
Parboil the cauliflower or broccoli in salted water until crisp-tender. Drain thoroughly.
In a saucepan, combine the vinegar, oil, onion, garlic, salt, pepper, sugar, basil, and oregano.
Bring the marinade to a boil, then reduce the heat and simmer uncovered for 10 minutes.
Place the drained cauliflower or broccoli, mushrooms, and olives in a large bowl.
Pour the hot marinade over the vegetables and stir gently to coat.
Cover and refrigerate for several hours, stirring occasionally.
Drain before serving. If desired, serve in a lettuce-lined bowl.

1/4 cup sugar
1 teaspoon dry mustard
1 teaspoon paprika
1 teaspoon celery seed

1 cup salad oil
In small mixer bowl, mix sugar, mustard, paprika, celery seed, and salt. Add vinegar, honey, lemon juice, and onion. Pour salad oil into mixture very slowly, beating constantly with rotary or electric beater. Makes about 2 cups. Serve with Midwinter Fruit Medley.
Midwinter Fruit Medley
1 1-pound can (2 cups) peach halves, drained
1 1-pound can (2 cups) pear halves, drained
1 8 3/4-ounce can (1 cup) pineapple tidbits, drained
Green grapes
1 11-ounce can (1 1/3 cups) mandarin orange sections, drained
2 bananas, sliced
Pitted dates, halved
1 recipe Honey Dressing
Arrange individual servings of peach and pear halves in lettuce cups. Fill centers and surround with remaining fruits. Pass Honey Dressing. Makes 6 servings.

A colorful midwinter fruit salad of canned and fresh fruits arranged in lettuce cups and served with a sweet, tangy honey dressing.
In a small mixing bowl, combine the sugar, dry mustard, paprika, celery seed, and salt.
Add the vinegar, honey, lemon juice, and grated onion. Beat until thoroughly combined.
While beating continuously with an electric mixer or whisk, add the oil in a very slow, steady stream until the dressing is blended and lightly emulsified. Set aside.
Drain the canned fruits thoroughly. Wash and dry the grapes, halve the dates, and slice the bananas shortly before assembling.
Place a lettuce cup on each of six serving plates. Arrange peach and pear halves in the lettuce cups.
Fill the centers and surround the peach and pear halves with pineapple tidbits, grapes, mandarin-orange sections, banana slices, and dates.
Serve the fruit medley with the honey dressing passed separately.

Small-Batch Veggie Pickles
1 qt white vinegar
1¾ cups sugar
¼ cup salt
2 tsp mustard seed
½ tsp fennel seed
½ tsp inst garlic
1 bay leaf
1½ pound head cauliflower (5 cups florets)
1½ pounds (3 lg) zucchini, unpared (¼" slices)
½ pound (3 lg) carrots, pared (¼" diag slices, 2 cups)
Bring vinegar salt sugar must fennel garlic & bay leaf quickly to a boil. Reduce heat and simmer covered 15 minutes.
Add cauliflower. Simmer covered until crisp-tender (4 min) remove. Add zucchini, simmer about 2 min. Remove. Add carrots, about 5 min. Pour carrots and liquid over other veggies. Cover & refrigerate.
Serve as hors d’oeuvres with picks or as pickle w/meat or fish.

Crisp-tender cauliflower, zucchini, and carrots in a sweet refrigerator-pickle brine seasoned with mustard seed, fennel, garlic, and bay.
Combine the vinegar, sugar, salt, mustard seed, fennel seed, garlic, and bay leaf in a large nonreactive pot. Bring quickly to a boil. Reduce the heat, cover, and simmer for 15 minutes.
Add the cauliflower and simmer, covered, for about 4 minutes, until crisp-tender. Lift it from the brine with a slotted spoon and place it in a large heatproof container.
Add the zucchini to the brine and simmer for about 2 minutes. Remove it with a slotted spoon and add it to the cauliflower.
Add the carrots and simmer for about 5 minutes. Pour the carrots and hot brine over the reserved vegetables.
Cover and refrigerate until thoroughly cold. Serve as hors d’oeuvres with picks, or serve as a pickle with meat or fish.

Spaghetti Salad
1 lb. thin spaghetti
2 15 oz. cans stewed tomatoes (drained)
1/2 lb. fresh mushrooms sautéed in tomato juice
1 red onion thinly sliced
1 8 oz. bottle Italian dressing
1 pkg salad toppings with Cheese or add grated Cheese
Cook spaghetti until tender, drain, rinse.
Add remaining ingredients. Chill & serve.
If make the day before do not add salad

A chilled spaghetti salad with stewed tomatoes, mushrooms, red onion, Italian dressing, and a crisp cheesy topping.
Drain the stewed tomatoes, reserving their juice.
Place the mushrooms in a skillet with enough reserved tomato juice to moisten the pan. Cook over medium heat until the mushrooms are tender and the liquid has mostly evaporated.
Cook the spaghetti according to the package directions until tender. Drain and rinse under cold water, then drain thoroughly.
In a large bowl, combine the spaghetti, drained tomatoes, mushrooms, red onion, and Italian dressing.
Cover and refrigerate until thoroughly chilled.
Add the packaged salad topping shortly before serving so it remains crisp. If using grated cheese instead, add it to taste.
Toss well and serve chilled.

A fresh spinach salad with mandarin oranges, pineapple, Bermuda onion, and slivered almonds, finished with a sweet, tangy seed dressing.
Place the spinach, drained mandarin oranges, drained pineapple, grated Bermuda onion, and slivered almonds in a large salad bowl. Toss gently to combine.
In a separate bowl, whisk together the sugar, salt, dry mustard, paprika, vinegar, grated onion, and sesame or poppy seeds.
While whisking continuously, slowly pour in the oil until the dressing is blended and lightly emulsified.

Baked Beef Stew

1# stewing meat (don’t brown first) (on bottom of pan)
3–4 carrots (good sized chunks) onion,
3 celery and 3 potatoes (med)
Dissolve 1 T. tapioca, 1 t sugar, and 1 t. salt in 3/4 c. tomato juice or V-8. Pour over contents in pan. Bake at 250° for 4 hours, covered. Cook rutabaga separately, if desired.

A slow-baked beef and vegetable stew with a lightly thickened tomato-juice gravy.
Place the uncooked stewing beef in the bottom of a covered baking dish. Do not brown it first.
Arrange the carrots, onion, celery, and potatoes over the beef.
Dissolve the tapioca, sugar, and salt in the tomato juice or V8. Pour over the meat and vegetables.
Cover and bake at 250°F for 4 hours.
If desired, cook rutabaga separately and serve it with the stew.

Mix all in large covered pot & cook at 325° for 2½ hrs. oven.

An easy covered-pot beef braise with mushrooms, onion soup mix, and dry red wine. Recipe attributed on the card to Ka Cotter (?).
Heat the oven to 325°F.
Place the cubed round steak, dry onion soup mix, cream of mushroom soup, drained mushrooms, and wine in a large oven-safe pot. Mix well and cover.
Cook covered in the oven for 2 1/2 hours.
Serve with rice or noodles. The card adds, “I use Rice-a-Roni beef.”
Replace the wine with 3/4–1 cup water. After braising, stir in 1/2–1 cup sour cream just before serving.

STROGANOFF (4 servings)
1 lb round steak, cut in thin strips
1/2 C chopped onion
2 T butter
1 (10 1/2 oz) can of mushroom soup
1/4 C water
1/2 C sour cream
1/2 t paprika
2 C cooked noodles
Brown steak in butter and onion.
Stir in soup, water, sour cream, and paprika.
Cover, cook on low heat 45 min., until tender.
Stir often.
Serve over noodles.

A streamlined beef stroganoff made with round steak, onion, condensed mushroom soup, paprika, and sour cream, served over noodles.
Pat the steak strips dry. Melt the butter in a large skillet over medium-high heat. Add the steak and onion. Cook, stirring and turning the meat as needed, until the steak is browned and the onion begins to soften. If the skillet is crowded, brown the steak in batches.
Stir in the mushroom soup, water, and paprika, scraping up any browned bits from the bottom of the skillet.
Bring the mixture to a gentle simmer. Cover, reduce the heat to low, and cook for about 45 minutes, stirring occasionally, until the steak is tender.
Remove the skillet from the heat. Stir in the sour cream until evenly incorporated and warmed through. Do not boil after adding the sour cream.
Serve immediately over the hot cooked noodles.

Season the chicken with the salt and pepper, then dredge it in flour.
Melt enough margarine to coat the bottom of a skillet. Add the chicken and diced onion. Brown the chicken on both sides while cooking the onion until softened.
Add enough prepared chicken broth to provide braising liquid. Braise the chicken and onion until the chicken is cooked through.
Remove the chicken from the skillet and reserve the pan juices.
Mix the curry powder with the yogurt. Stir the yogurt mixture into the reserved pan juices and cook until thickened.
Pour the sauce over the chicken.

Easy Corn Soup
2 med. potatoes, peeled & diced
1 cup water
1 1/4 cup cream style corn
1 pt milk

Boil potatoes in water until thick. Combine all

A long-simmered beef chuck stew with carrots, potatoes, two kinds of onion, and a gravy-style broth. It may be served with dumplings.
Lightly coat the beef cubes with flour.
Melt 1–2 tablespoons butter in a large, heavy pot. Brown the floured beef thoroughly.
Add the hot water, lemon juice, Worcestershire sauce, garlic, sliced medium onion, bay leaf, salt, and sugar.
Simmer the stew for 2 hours.
Add the quartered carrots, small onions, and potatoes.
Continue cooking for 30–60 minutes, until the beef and vegetables are tender.
Thicken the cooking liquid to the desired gravy consistency using the preferred method. Remove the bay leaf before serving.
Serve the stew as is or with dumplings.

1/3 cup chopped gr. pepper

1/2 cup rice

Cook the sausage pieces in a large soup pot over medium heat until lightly browned. Spoon off the rendered fat, leaving about 2 tablespoons in the pot.
Add the onion, green bell pepper, and garlic. Cook until the vegetables begin to soften.
Stir in the water, tomato juice, kidney beans, rice, paprika, chili powder, salt, and pepper.
Bring to a gentle boil. Reduce the heat, cover, and simmer for 25–30 minutes, stirring occasionally, until the rice is tender and the sausage is cooked through.
Taste and adjust the seasoning before serving hot.

3 lbs lean beef chuck roast
carrots (1 per serving)
2 tsp dehydrated onion
1 cabbage wedge
1/2 cup raw cauliflower or 3 oz potato (count 1 choice)
Place beef in dutch oven, cover with water. Bring to boil; reduce heat and simmer until tender.
(2–3 hours) Remove meat and refrigerate. Place broth in covered bowl and " overnight. Skim all fat from broth. For each serving:
Slice 4–6 ounces beef. Put into saucepan with 6 oz broth and sliced carrots (potatoes). Cook 15 min. Add other veggies. Cook until all is tender.
Count 1 beef

Tender simmered beef served with defatted broth, carrots, cabbage, and a choice of cauliflower or potato.
Place the beef in a Dutch oven. Add the dehydrated onion and enough water to cover. Bring to a boil, then reduce the heat and simmer for 2–3 hours, or until the beef is tender.
Remove the beef and refrigerate it. Transfer the broth to a covered bowl and refrigerate it overnight.
The next day, skim all the fat from the broth.
For each serving, place 4–6 ounces sliced beef in a saucepan with 6 fluid ounces broth and one sliced carrot. If using potato, add it now.
Cook for 15 minutes.
Add the cabbage and, if using it instead of potato, the cauliflower. Continue cooking until all the vegetables are tender.

A flexible stovetop dish of pork chops simmered beneath sauerkraut seasoned with sautéed onion and caraway seed.
Melt the butter in a frying pan over medium heat. Add the chopped onion and sauté until softened.
Add enough sauerkraut to surround and eventually cover the pork chops, including some of its liquid, and mix it with the onion.
Nestle the pork chops into the pan and cover them with the sauerkraut. Sprinkle the caraway seed over the sauerkraut.
Reduce the heat to low and simmer until the pork chops are tender and cooked through, adding a little water if the pan becomes dry.
Serve hot, or cool and refrigerate overnight as the source recommends for better flavor. Reheat thoroughly before serving.

Quick Chicken Stroganoff - (Loeligers)
500 gr Sasami, Cut up
3 T butter or marg
2 T finely chopped scallions

1 can (10 1/2 oz) mush soup
1 can (3 oz) mush sliced
1/2 c sour cream
Hot cooked noodles or rice

A quick, creamy chicken-and-mushroom stroganoff made with chicken tenders, scallions, mushroom soup, and sour cream, served over noodles or rice.
Pat the chicken pieces dry. Melt the butter or margarine in a large skillet over medium-high heat.
Add the chicken in a single layer and cook, stirring and turning as needed, until lightly browned. Work in batches if necessary to avoid crowding the pan.
Add the scallions and the salt, if using. Cook for about 1 minute, until the scallions begin to soften.
Reduce the heat to medium. Stir in the mushroom soup and sliced mushrooms, scraping up any browned bits from the bottom of the skillet.
Bring the sauce to a gentle simmer. Cook, stirring occasionally, until the chicken is fully cooked and reaches 165°F at its thickest point.
Remove the skillet from the heat, or reduce the heat to very low. Stir in the sour cream until evenly incorporated and hot. Do not boil after adding the sour cream.
Serve immediately over hot cooked noodles or rice.

Timeless Vegetable-Beef Soup (Serves 8–10)
Combine in a large kettle: 2–3 lbs. beef soup bones; 3 qts. water or stock; 1 1/2 t. salt; 1/4 t. pepper; 1 bay leaf. Cover and simmer 2–3 hours. Remove bones and strain fat if necessary. Cut off, chop, and reserve meat. Add 1/2 cup barley. Continue cooking 1/2 hour.
Add: 1 c. diced carrots; 1 c. diced potatoes; 1 c. peas or green beans; 1 c. diced celery and leaves; 1/2 c. chopped onion; 2 c. shredded cabbage; (2 c. cooked tomatoes); herbs and seasonings to taste; reserved meat. Cook just until vegetables are tender. Add any leftover vegetables available. Heat through. (Optional: chili sauce or chili powder to taste, or stir in 1/2 c. sour cream just before serving.)

A large-kettle beef and barley soup loaded with vegetables and designed to welcome leftovers.
Combine the soup bones, water or stock, salt, pepper, and bay leaf in a large kettle. Cover and simmer gently for 2–3 hours.
Remove the bones. Skim or strain off excess fat if needed. Remove, chop, and reserve any meat from the bones.
Add the barley to the broth and simmer for 30 minutes.
Add the carrots, potatoes, peas or green beans, celery, onion, cabbage, optional tomatoes, seasonings, and reserved meat. Cook just until the vegetables are tender. Add leftover vegetables, if using, and heat through.
Season with chili sauce or chili powder, or stir in the sour cream just before serving without allowing the soup to boil.

Carp Boiled with Ginger
Recipe from: Mary Kay
1 1/2 lbs. (670 grams) carp. Rinse and cut into 4 pieces.
Combine in saucepan:
1 cup sake
1 1/2 cups water
2 tablespoons sliced fresh ginger root
Bring liq. to boil and add carp.
Reduce heat and simmer 20 min.
Add 5 T sugar
5 T shoyu
Continue simmering until sauce is slightly thick.
Garnish with fresh ginger root.

Carp simmered with sake and fresh ginger, then finished with sugar and shoyu.
Combine the sake, water, and sliced ginger in a saucepan.
Bring the liquid to a boil and add the carp. Reduce the heat and simmer for 20 minutes.
Add the sugar and shoyu. Continue simmering until the sauce has thickened slightly.
Garnish with fresh ginger and serve.

Mustard Sauce
1/4 cup condensed tomato soup
1/4 cup prepared mustard
1/8 cup vinegar
1/4 cup sugar
1/4 cup butter
1 1/2 beaten egg yolks
Cook in double
boiler until

1/2 cup brown sugar 1/2 tsp dry mustard
2 T fruit juice
mix mustard with brn sugar and fruit juice
for glaze

A baked ham finished with a brown-sugar and dry-mustard glaze, accompanied by a rich, tangy mustard sauce made with condensed tomato soup.
Check the ham’s label to determine whether it is fully cooked or must be cooked before eating. Heat the oven to 325°F, or follow the package directions if they differ.
Place the ham in a roasting pan and bake for approximately 2 1/2 hours, using its required internal temperature—not time alone—to determine doneness.
Meanwhile, combine the brown sugar and dry mustard. Stir in the fruit juice to make a spreadable glaze.
During the final 20–30 minutes of baking, brush the glaze over the ham. Return it to the oven uncovered so the glaze can set.
To make the mustard sauce, set up a double boiler with gently simmering water; the water should not touch the upper pan.
In the upper pan, whisk together the beaten egg yolks, sugar, condensed tomato soup, prepared mustard, and vinegar. Add the butter.
Cook over the simmering water, whisking or stirring constantly, until the butter has melted and the sauce thickens enough to coat a spoon. Do not allow it to boil. Because the sauce contains egg yolks, cook it to 160°F.
Let the ham rest briefly before carving. Serve it with the warm mustard sauce alongside.

4 servings
1 cup water, stock, or dashi
3 T shoyu
1 1/2 T honey
1 T mirin
4 oz tofu cutlets, burgers, or pouches cut into
1/2" strips
1 cup (brown) rice, cooked
dash of Sansho pepper
sliced onions
Combine sauce ingredients in saucepan, bring to
a boil. Add tofu and simmer for 5 minutes.
Add onions and simmer 2 min more.
Divide cooked rice among 4 bowls. Pour
hot broth & tofu over. Season with the pepper.
If desired top with nori or Sweet Vinegared Ginger-
root slivers.

A Japanese-inspired rice bowl topped with tofu and sliced onions simmered in a sweet-savory shoyu and mirin broth.
Combine the water, stock, or dashi with the shoyu, honey, and mirin in a saucepan. Bring to a boil.
Add the tofu strips and simmer for 5 minutes.
Add the sliced onions and simmer for 2 minutes more.
Divide the cooked rice among four bowls. Pour the hot broth and tofu over the rice.
Season with sansho pepper. If desired, garnish with nori or sweet vinegared ginger-root slivers.

Korean Cod

4 slices Cod (or whitefish) - Salt lightly
Toast in a heavy frying pan:
4 T white goma
Shake the pan until the seeds begin to
jump. Crush seeds. Prepare marinade
by combining seeds w/
4 T Sake or dry sherry
2½ T soy sauce
1 in. Ginger grated
Marinate fish 1-2 hrs.
Pat off excess marinade and
dredge in: 1/2c flour
Heat 2-3 cups
oil for frying:
And deep fry until golden brown.

Cod or other white fish marinated with toasted sesame seeds, sake, soy sauce, and ginger, then dredged in flour and deep-fried until golden.
Salt the fish lightly.
Toast the sesame seeds in a heavy frying pan, shaking the pan until the seeds begin to jump. Crush the toasted seeds.
Combine the crushed sesame seeds, sake or dry sherry, soy sauce, and grated ginger to make the marinade.
Marinate the fish for 1–2 hours.
Remove the fish from the marinade and pat off the excess. Dredge the fish in the flour.
Heat the oil in a suitable deep pan. Deep-fry the fish until golden brown and cooked through.
Drain well and serve hot.

Pork and Tofu
1/2 lb lean pork
1 T soy sauce
1/2 tsp sugar
1 tsp flour
1 green onion, chpd
2 sq tofu
1 T salad oil
1 t salt
1 dash chili pwd
Chop or grind pork and mix w/:
1 T soy sauce
1/2 tsp sugar
1 tsp flour
Put half oil into frypan and
when hot fry the tofu in
2" x 1" x 1/4" slices until golden
brn on both sides. Remove &
keep warm. Add remaining
oil & pork mixture and fry until
nearly done. Add cooked tofu
and the rest. Cook about 5
min. Serve Hot.

Pan-fried tofu and seasoned pork cooked with green onion, shoyu, and a dash of chili.
Combine the pork, shoyu, sugar, and flour. Mix until the pork is evenly seasoned.
Drain the tofu and pat it dry. Cut it into slices approximately 2 × 1 × 1/4 inches.
Heat half of the oil in a large skillet over medium-high heat. Fry the tofu in batches until golden brown on both sides. Transfer it to a plate and keep warm.
Add the remaining oil to the skillet. Add the pork mixture and stir-fry until nearly cooked through.
Return the tofu to the skillet. Add the green onion, salt, and chili powder.
Cook for about 5 minutes, turning the tofu gently to avoid breaking it, until everything is hot and the pork reaches 160°F.
Serve hot.

Scallops Kabobs

Thaw and rinse scallops — 16 (fresh or frozen)
Melt 4 T butter
add 2 cloves garlic/crushed
salt & pepper
Remove from heat and add scallops into the seasoned butter.
Cut & wash:
16 one-inch naganegi
16 pieces green pepper
16 mushroom caps
16 chunks pineapple
Broil about 10 min. 4 inches from flame until scallops are golden and other ingredients are cooked. Turn once during cooking and baste with garlic butter.

Broiled scallop kabobs with naganegi, green pepper, mushrooms, and pineapple, basted with garlic butter.
If using frozen scallops, thaw them. Rinse the scallops and pat dry.
Melt the butter with the crushed garlic, salt, and pepper.
Remove the seasoned butter from the heat. Add the scallops and turn them to coat.
Cut and wash the naganegi. Prepare the green pepper, mushroom caps, and pineapple.
Thread the scallops, naganegi, green pepper, mushrooms, and pineapple onto skewers.
Arrange the skewers about 4 inches below the broiler. Broil for about 10 minutes, turning once and basting with the garlic butter, until the scallops are golden and the other ingredients are cooked.

Bread:
1 cup milk
1 Tbsp. shortening
2 Tbsp water
3 cups flour
1 Tbsp. sugar
1 tsp. salt
1 pkg. activated dry yeast
Mix 1/3 flour & other dry ingredients.
Heat liquid until warm (shortening just melted). Add to dry ingredients. Beat at med. speed 2 min. Add 1/2 cup flour. Beat at high speed 2 min. Fold in the rest of the flour.
Knead, rise. - For bread - knead, put in greased loaf pan, rise. Bake 400° for 45 min. to 1 hr.
For Sizzens - knead second time. Cut into 12.
Fold over hamburger ball with minced onions & salt. Put on cookie sheet. Bake 400° 25 min. to 1/2 hr.
Variations:
- Combine ground hamburger & pork
- Add dill
- Add cheese
- Spread beat egg on top & sprinkle with sesame seeds

A soft yeast dough used either for a simple loaf or divided into twelve portions and wrapped around seasoned hamburger filling to make Sizzens. The original card gives no quantity for the meat filling, so the normalized recipe preserves that flexibility rather than inventing one.
Combine about 1 cup of the flour with the sugar, salt, and active dry yeast.
Warm the milk, water, and shortening together just until warm and the shortening has melted. Add to the dry ingredients.
Beat at medium speed for 2 minutes. Add 1/2 cup flour and beat at high speed for 2 minutes. Fold or stir in enough of the remaining flour to make a workable dough.
Knead the dough until smooth, then let it rise until visibly expanded. The original card does not specify a rising time.
Knead the risen dough again, shape it into a loaf, place it in a greased loaf pan, and let it rise again. Bake at 400°F for 45 minutes to 1 hour.
After the first rise, knead the dough a second time and divide it into 12 pieces. Form ground beef into 12 appropriately sized portions and season with minced onion and salt. Flatten or stretch each piece of dough around a portion of filling and seal it closed.
Arrange the filled buns on a cookie sheet and bake at 400°F for 25 to 30 minutes, until the bread is baked through and the filling is fully cooked.

1 T snipped parsley

Mix thoroughly meats, onion, crumbs, parsley, salt & pep.,
W sauce, egg, milk — refrigerate 2 hrs. Shape. Brn in oil.
Blend flour, pap., salt & pepper into oil in skillet. Roux. Water,
cook as cream sauce. Reduce heat. Add Sour Cream. Add meatballs. Heat.

Beef-and-pork meatballs in a paprika-seasoned sour cream gravy.
Thoroughly combine the ground beef, ground pork, onion, breadcrumbs, parsley, 2 teaspoons salt, 1/8 teaspoon pepper, Worcestershire sauce, egg, and milk.
Cover and refrigerate the meat mixture for 2 hours.
Shape the chilled mixture into meatballs.
Heat the vegetable oil in a large skillet. Brown the meatballs in batches, then transfer them to a plate. Retain the oil in the skillet.
Blend the flour, paprika, 1/2 teaspoon salt, and 1/8 teaspoon pepper into the skillet oil. Cook, stirring, until smooth and bubbling.
Gradually stir in the water. Cook, stirring, until the sauce is smooth and thickened to the consistency of a cream sauce.
Reduce the heat and stir in the sour cream until evenly combined. Do not boil.
Return the meatballs to the skillet. Heat gently until the sauce is hot and the meatballs are cooked through to an internal temperature of 160°F.

Chicken-liver, naganegi, and shiitake skewers dipped in a sweet shoyu-and-sake sauce and broiled until glazed.
If using wooden skewers, soak them in water before assembling. Heat the broiler.
Stir together the shoyu, sake, and sugar until the sugar dissolves. Divide the sauce between two bowls, reserving one bowl for glazing after the initial broiling.
Thread the chicken livers, naganegi, and shiitake evenly onto 16 skewers.
Dip or brush the skewers with the first portion of sauce. Discard any sauce that contacted the raw chicken livers.
Broil the skewers, turning once, until browned and the chicken livers reach 165°F.
Dip or brush the cooked skewers with the reserved clean sauce. Return them briefly to the broiler to set the glaze.
Serve hot.

1 lb. ground beef
1 pkg. Lipton noodle soup
1 onion
3 stalks celery
1/2 C. dry rice
2 C. boiling water
Fry onion, meat & celery. Add rice & soup to boiling water. Add to top mixture. Bake 1 hour; stir occasionally.
Casseroles & Savory Bakes
A baked ground-beef, rice, onion, and celery casserole seasoned with Lipton Noodle Soup mix.
Heat the oven to 350°F.
Cook the onion, ground beef, and celery together until the beef is browned. Transfer the mixture to a baking dish if necessary.
Stir the rice and Lipton Noodle Soup mix into the boiling water. Pour over the beef and vegetables.
Bake at 350°F for 1 hour, stirring occasionally.

A simple holiday sweet-potato casserole baked with applesauce, brown sugar, cinnamon, butter, and chopped nuts.
Heat the oven to 375°F.
Cut the drained sweet potatoes into serving-size pieces if necessary and place them in a baking dish.
Stir together the applesauce, brown sugar, salt, and cinnamon.
Gently fold the applesauce mixture into the sweet potatoes, taking care not to break them up excessively.
Dot the top with butter and sprinkle with the chopped nuts.
Bake uncovered for 45 minutes, until hot and lightly browned around the edges.
Let stand briefly before serving warm.

Bean ’n Rice Loaf
3 eggs
1/4 cup powdered milk
1/4 cup minced onion
2 cups cooked genmai
1/4 cup minced celery
1 med tomato diced
2 cups cooked soybeans, chopped

1 tsp paprika
1/2 tsp white pepper
Beat eggs in a mixing bowl; add vegetables & seasonings. Stir in milk. Mix in brn rice & beans. Put mixture into buttered loaf pan & bake 20–30 min 350°.
Serves 4–5.

A savory vegetarian loaf made with brown rice, soybeans, vegetables, eggs, and seasonings.
Heat the oven to 350°F. Butter a loaf pan.
Beat the eggs in a mixing bowl.

Stir in the powdered milk.
Mix in the cooked brown rice and chopped soybeans.
Transfer the mixture to the prepared loaf pan.

2 pkgs frozen chopped broccoli (cooked)
Melt margarine + mix w/cracker crumbs
Place 1/3 mixture in deep casserole
Add a layer of cooked broccoli (1/2)
Add a layer of cheese (1/2)
(Repeat)
Add last 1/3 of crumb mixture
Bake 30 min. @ 350°

A layered broccoli casserole with Velveeta and buttery Ritz cracker crumbs.
Heat the oven to 350°F.
Melt the margarine and combine it thoroughly with the cracker crumbs.
Spread one-third of the crumb mixture in the bottom of a deep casserole dish.
Layer half of the cooked broccoli over the crumbs, followed by half of the diced Velveeta.
Add another third of the crumb mixture, then the remaining broccoli and Velveeta.
Sprinkle the final third of the crumb mixture evenly over the top.
Bake for 30 minutes, until hot and lightly browned.

Carrot Casserole

Melt the margarine in a casserole dish. Add the drained carrots and turn them gently to coat.
Arrange the diced Velveeta over the carrots and cover with an even layer of crushed potato chips.
Bake uncovered for 30–40 minutes, until the casserole is hot and the cheese has melted.

Cheese Souffle
1 cup grated cheese (sharp)
1 cup Thick Cream Sauce
3 egg yolks well beaten
1/4 tsp cream of tartar
3 egg whites
Heat oven 350°. Blend cheese into sauce, gradually stir into egg yolks. Add cream of tartar to whites, beat till stiff.
Pour into 1 1/2 qt baking dish (ungreased) — make groove w/ spoon 1" from edge. Bake in pan of hot water 1" deep

A classic cheese soufflé made with thick cream sauce and beaten egg whites, baked in a water bath.
Heat the oven to 350°F.
Blend the grated cheese into the thick cream sauce. Gradually stir the cheese sauce into the egg yolks.
Add the cream of tartar to the egg whites and beat until stiff.
Fold the cheese-and-yolk mixture into the beaten egg whites.
Pour into an ungreased 1 1/2-quart baking dish. Make a groove with a spoon 1 inch from the edge.
Set the dish in a pan of hot water 1 inch deep. Bake for 50–60 minutes, until puffed and set.
Serve immediately. The source suggests serving it with vegetables and mushroom sauce.

1 10-oz pkg frozen broccoli
1 10 3/4 oz can cheddar cheese soup
1 cup chopped cooked ham, or chicken, or turkey
1 cup cooked rice
1/2 cup sour cream
1/2 cup buttered bread crumbs
Cook broccoli until barely tender; drain well. Stir soup & sour cream together. Add remaining ingredients. Put in 1 1/2 qt dish. Sprinkle w/ bread crumbs. Bake 350° for 30–35 minutes.
Serves 4–6.

Chicken & Asparagus Casserole

2 chicken breasts, boned, skinned and cut into pieces 2 x 4 3/4" (sasami)
(1 1/2 tsp msg)
1/4 tsp pepper
1/2 c corn oil
2 10-oz pkgs frozen asparagus (or equivalent)
1 #10 can condensed cream of chicken soup
1/2 c. mayonnaise
1 tsp lemon juice
1/2 tsp curry pwd
1 cup sharp shredded cheddar cheese
Sprinkle chicken w. spices. Pour oil into fry pan & saute
chicken until opaque; drain on paper.
Cook aspar. Drain. Line 9x9x2" pan with aspar.
Cover w/ chicken. Mix soup mayo lemon & curry;
pour over chicken & aspar. Sprinkle w/ cheese.
Cover w/ foil. Bake 375 - 30 min. Serves 4.

Patty’s Enchilada Casserole
1 1/2# ground beef
1 cup chopped onions
1 1/2 tsp gr. cumin
4 tsp chili pwd
1 1/2 tsp salt
1/2 tsp pepper
1 cup water
2 cups (four 4-oz cans) taco sauce
(1 8-oz hot and one 8-oz mild mixed)
12 corn tortillas
1/2 lb m-jack cheese, shredded
1/2 lb cheddar, shredded
1 cup sour cream
Preheat oven 375 and grease 9x13 casserole. In skillet
cook beef & onion until brn. Discard drippings and add
next 6 ingred. Simmer 10 min or until most of liquid
has evaporated, uncovered and stir frequently.
Pour 1/2 cup taco sauce into casserole, arrange 1/2
tortillas, cut into 1/4ths over bottom overlapping. Pour
1/2 cup taco sauce over tortillas. Spoon in beef
mixture, top with sour cream and sprinkle 1/2 the
cheese (mixed) over. Arrange remaining tortillas, over-
lapping over cheese. (May be refrigerated at this point
for 24 hours.) Cover with foil and bake 40 min. Uncover
and bake 5 min more.
8–10 servings. 375 cal for 8 and
4 for 10. Can use all cheddar.

A layered ground-beef and corn-tortilla casserole with taco sauce, sour cream, Monterey Jack, and cheddar.
Heat the oven to 375°F. Grease a 9 × 13-inch casserole dish. Mix the shredded Monterey Jack and cheddar together.
In a large skillet, cook the ground beef and chopped onions until the beef is browned. Drain and discard the drippings.
Add the cumin, chili powder, salt, pepper, water, and 1 cup taco sauce to the skillet. Simmer uncovered for about 10 minutes, stirring frequently, until most of the liquid has evaporated.
Pour 1/2 cup of the reserved taco sauce into the prepared casserole dish.
Arrange half of the quartered tortillas over the bottom of the dish, overlapping them. Pour the remaining 1/2 cup reserved taco sauce over the tortillas.
Spoon the beef mixture over the tortillas. Spread the sour cream over the beef, then sprinkle with half of the mixed cheeses.
Arrange the remaining tortilla quarters over the cheese, overlapping them.
The assembled casserole may be covered and refrigerated at this point for up to 24 hours.
Cover the casserole with foil and bake at 375°F for 40 minutes.
Remove the foil and sprinkle the remaining mixed cheese over the casserole. Bake uncovered for 5 minutes more.

Sour Cream Chicken Enchiladas
4 c. sour cream
3 - 5 oz. cans chicken (1 lb. pieces) [clarification: three 5 oz. cans, about 1 lb.; “cut up” written above]
8 oz. mushrooms
4 oz. green chilis (drained) [“diced” written above]
1/3 c. onion flakes
1 can pitted chopped black olives
1 tsp. chili powder
1/2 tsp. salt
1/2 tsp. garlic powder
1/4 tsp. pepper
12 flour tortillas (for frying salad oil)
1/2 lb. shredded cheddar cheese
In a 9 x 13 x 2" greased pan spread 1 c. sour cream.
In large saucepan combine chicken, mushrooms, chilis, olives and seasonings. Cook over low heat. Add 1/2 c. sour cream.
Preheat oven to 450°. Heat oil in a skillet. Fry tortillas one at a time for just a few seconds on each side, to soften. Drain on paper towel. Spread 1/4 c. chicken filling down center of each tortilla. Fold sides in and place on sour cream in pan, seam side down. Spread remaining sour cream over all. Sprinkle cheese on top. Bake 8–10 min. just to warm and melt cheese.

A rich sour-cream chicken enchilada casserole with mushrooms, green chiles, black olives, and cheddar. The tortillas are briefly fried to soften them before filling, then the assembled enchiladas are covered generously with sour cream and baked just until hot and melted.
Grease a 9 × 13 × 2-inch baking dish. Spread 1 cup of the sour cream evenly over the bottom.
In a large saucepan, combine the chicken, mushrooms, green chiles, onion flakes, black olives, chili powder, salt, garlic powder, and pepper. Cook over low heat until warmed through. Stir in ½ cup sour cream.

1/2 lb gr beef / 1/2 lb gr pork

Small bell-pepper halves filled with beef and pork, browned meat-side down, then baked over garlicky eggplant beneath spaghetti sauce until very tender.
Heat the oven to 300°F.
In a bowl, gently combine the ground beef, ground pork, breadcrumbs, onion, 1/2 teaspoon garlic, parsley, salt, Parmesan, and egg.
Halve the bell peppers lengthwise and remove the stems, seeds, and membranes. Divide the meat mixture among the pepper halves.
Heat a thin layer of oil in a large oven-safe pan, preferably enameled cast iron. Working in batches if necessary, place the peppers meat-side down in the pan. Cook slowly until the filling is browned on the surface, then remove the peppers.
Add the eggplant rounds and additional garlic to the pan. Cook until the eggplant is lightly browned and beginning to soften, adding more oil as needed.
Arrange the eggplant in a loose layer and return the stuffed peppers to the pan. Pour the spaghetti sauce over everything.
Bake uncovered for 2 hours, until the peppers are very tender, the filling is cooked through, and the sauce has thickened.
Serve hot with rice or pasta.

Heat the oven to 350°F. Grease a 7-inch soufflé or deep casserole dish.
Wrap a band of buttered parchment or foil around the outside of the dish so it extends above the rim. Secure it firmly.
Melt the butter in a saucepan over medium heat. Stir in the flour and cook briefly without browning. Gradually whisk in the milk—or the cream and vegetable stock—and cook until the sauce comes to a boil and thickens.
Stir the well-drained chopped vegetables into the sauce and heat through. Reduce the heat to low.
Whisk a small amount of the hot vegetable sauce into the beaten egg yolks. Gradually stir the warmed yolks back into the saucepan. Cook over low heat for 1 minute without allowing the mixture to boil.
Season with salt, pepper, and nutmeg. Let the mixture cool until it is no longer hot.
Beat the egg whites until stiff but not dry.
Gently fold the beaten whites into the cooled vegetable mixture in several additions.
Transfer the mixture to the prepared dish. Bake for about 40 minutes, until risen and set. A knife inserted 1 inch from the edge should come out clean.
Serve immediately, with hot mushroom sauce if desired.

A long-simmered, savory barbecue sauce with finely chopped onion, beef consommé, tomato-based chili sauce, vinegar, brown sugar, and a modest amount of heat.
Combine the onion, chili sauce, vinegar, ketchup, beef consommé, hot sauce, Worcestershire sauce, and brown sugar in a heavy-bottomed, nonreactive saucepan.
Place the pan over medium heat and stir until the brown sugar dissolves and the mixture reaches a gentle simmer.
Reduce the heat to low. Cook at a slow, steady simmer for 2–3 hours, stirring occasionally and scraping the bottom and sides of the pan.
As the sauce reduces, stir more frequently to prevent scorching. It is ready when the onion is very tender, the flavors have blended, and the sauce lightly coats a spoon. The sauce will thicken further as it cools.
Use warm, or cool promptly and refrigerate in a covered container.

1 cup mayo
1 T horseradish
1 T Wors

Mix
Soften cheese with
vinegar; add to mixture

Stir the blue-cheese mixture into the mayonnaise mixture until evenly combined.
Fold in the chopped black olives.

Melt the fat in a small saucepan over medium heat.

Stir in the sugar and salt.
Gradually add the hot water, whisking continuously after each addition to keep the sauce smooth.
Whisk in the shoyu. Bring the sauce to a gentle simmer and cook, stirring frequently, until thick enough to coat a spoon.
Serve hot over egg foo yung, with fresh bean sprouts if desired.

Cranberry-Orange Relish
2 lbs. fresh or frozen cranberries
(8 cups)
2 cups water
1 cup packed brown sugar
1 cup golden raisins
2 oranges, peeled & diced
Combine cranberries & water in heavy
saucepan. Bring to boil, then cook over
med. heat until cranberries pop, about
5 min. Add sugar, raisins and
oranges and cook over med heat
about 15 min. or until thickened,
stirring occasionally. Cool, then chill.
Makes about 6 cups.

A chilled cooked cranberry relish with diced oranges, golden raisins, and brown sugar.
Combine the cranberries and water in a heavy saucepan.
Bring to a boil, then reduce the heat to medium. Cook for about 5 minutes, until the cranberries begin to pop.
Add the brown sugar, golden raisins, and diced oranges.
Continue cooking over medium heat for about 15 minutes, stirring occasionally, until the relish has thickened.
Remove from the heat and let cool.
Cover and refrigerate until thoroughly chilled. Serve cold.

A generous soy-and-brown-sugar chicken marinade enriched with butter and seasoned with fresh ginger, onion, and garlic.
Whisk together the soy sauce, brown sugar, melted butter, water, ginger, onion powder, and garlic powder until the sugar is mostly dissolved.
Let the marinade cool completely if the butter was hot.
Place the chicken in a nonreactive container or resealable bag. Add enough marinade to coat it well. Cover and refrigerate for several hours or overnight.
Remove the chicken from the marinade and discard the used marinade.
Bake or barbecue the chicken until browned, cooked through, and at least 165°F at the thickest part.

Three cake layers filled with a bright, buttery lemon curd and finished with powdered sugar.
In a heavy-bottomed saucepan, whisk together the eggs and granulated sugar. Add the lemon zest, lemon juice, and butter. Cook over low heat, stirring constantly, until the curd is thick like honey. Do not let it boil.
Transfer the curd to a bowl. Press waxed paper or parchment directly against its surface and let cool.

A devil’s food cake with a cooked butterscotch filling, chopped nuts, fluffy marshmallow frosting, and decorative chocolate curls.
Prepare a devil’s food cake in a 9 × 13-inch pan according to the chosen recipe or mix. Let it cool completely.
Combine the brown sugar, flour, and light cream in a saucepan. Heat the mixture to boiling, stirring as needed. Remove it from the heat.
Stir the butter and vanilla into the hot mixture. Let the filling cool.
Use the cooled butterscotch mixture to fill the cake. Sprinkle the chopped nuts over the filling.
In a large mixing bowl, beat the marshmallow creme, pasteurized egg whites, water, and vanilla at high speed until very stiff peaks form. Scrape the sides of the bowl often. Tint the frosting green.

Caramel Fondue
14 oz caramels (light)
1/3 cup water

A simple warm caramel sauce for dipping.
Combine the caramels, 1/3 cup water, and salt in the top of a double boiler.
Cook over simmering water, stirring occasionally, until the caramels are completely melted and the mixture is smooth.
If the fondue is too thick, stir in additional water a little at a time until it reaches the desired consistency.
Serve warm.

Cheesecake Cupcakes

12 cupcake papers
12 vanilla wafers
4 — 3 oz pkgs cream cheese
2 eggs
1/2 cup sugar
1/2 tsp vanilla
Canned pie filling
sour cream + fruit
Place 1 vanilla wafer into
each cupcake paper, set into
muffin tin. Beat
together the cheese, eggs,
sugar and vanilla.
Fill ea. paper 2/3 full.
Bake at 350° for 15–20
min. before topping/filling.
(cupcakes may fall slightly)
Refrig. at
least one hour
before serving.
(Cupcakes freeze
well)

Individual vanilla-wafer-crusted cheesecakes topped with canned pie filling or sour cream and fruit. Recipe from Mary Kay.
Heat the oven to 350°F. Line a 12-cup muffin pan with paper liners. Place one vanilla wafer in the bottom of each liner.
Beat the softened cream cheese, eggs, sugar, and vanilla together until smooth.
Divide the cream cheese mixture among the liners, filling each about two-thirds full.
Bake at 350°F for 15–20 minutes. The cupcakes may fall slightly as they cool.
Let the cupcakes cool before topping them with canned pie filling or with sour cream and fruit.
Refrigerate for at least 1 hour before serving.

Confectioner’s Icing
Add light cream or 1/2 & 1/2 to
2 cups Confect. sugar to make
icing. For piped trim add enough to
pipe thru pastry tube. For glaze, make
a little thinner — runny.

A simple two-ingredient icing that can be made thick for piping or thinned to a pourable glaze.
Place the confectioners’ sugar in a bowl. Gradually stir in light cream or half-and-half until the icing is smooth.
For piping, use only enough cream to make an icing that will pass through a pastry tube while retaining its shape.
For a glaze, add additional cream a small amount at a time until the icing is thinner and runny.

Cream Cheese Frosting
Cream 1/2 cup marg., 8 oz cream cheese,
1 tsp vanilla. Beat in one lb.
confectioners sugar — if too thick
add milk as desired.

A simple cream cheese frosting made with margarine, vanilla, and confectioners’ sugar, with milk added as needed for consistency.
Beat the softened margarine and cream cheese together until smooth.
Beat in the vanilla.
Gradually beat in the confectioners’ sugar until smooth.
If the frosting is too thick, beat in milk a small amount at a time until it reaches the desired consistency.

Dream Dessert (4 Layer Elegant Dessert)
9 × 13" pan
Crust:
1 cube marg melted
½ cup crushed pecans
1 cup flour
Mix together & press into 9 × 13" pan.
Bake 350° 15 min. Cool.
Cream together 1–8 oz pkg cream cheese
1 cup pwd sugar
Mix in ¾ container (lg) Cool Whip.
Put on first mixture.
Mix together 1 small pkg instant vanilla and 1 small pkg choc pudding (inst) with 3 cups milk. Pour over other mixture.
Cover all with rest of Cool Whip & shave milk choc on top with potato peeler.

Patty’s four-layer refrigerator dessert: a baked pecan crust, sweet cream-cheese filling, combined vanilla-and-chocolate pudding, and a whipped topping finished with shaved milk chocolate.
Heat the oven to 350°F. Mix the melted margarine, pecans, and flour. Press into a 9 × 13-inch pan and bake for 15 minutes. Cool completely.
Beat the softened cream cheese with the confectioners’ sugar until smooth. Fold in three-quarters of the whipped topping, about 12 oz. Spread over the cooled crust.
Whisk both pudding mixes with the cold milk until smooth and beginning to thicken. Spread over the cream-cheese layer.
Cover with the remaining whipped topping. Use a vegetable peeler to shave milk chocolate over the top. Refrigerate until thoroughly chilled and set before serving.

Fruitcake

Assemble ingredients & let stand at room temp. 1 hr.
To make two 9" x 5" x 3" loaf pans:
1 1/2 lb. pitted dates
1 lb. candied pineapple
1 lb. whole candied cherries
2 c. sifted all-purpose flour
2 t. baking powder
1/2 t. salt
4 eggs
1 c. granulated sugar
2 lb. (8 c.) pecan halves
white corn syrup
(cheesecloth) (brandy)
Cut dates & pineapple in coarse pieces; add whole cherries.
Mix sifted flour, baking pwd & salt. Sift over fruit.
Mix fruit & dry ingredients well with fingers so all pieces are coated.
With electric mixer beat 4 eggs until frothy. Gradually beat in 1 c. sugar.
Add to fruit mixture; mix well with spoon.
Add 2 lb. pecans. Mix with hands until nuts are evenly distributed & coated with mixture.
* Pack into pans with hands, pressing down with palms to fill in spaces. Decorate tops with pecan halves & whole cherries if desired.
Bake cakes at 275° for about 1 1/2 hours. (Tops of cakes where batter is visible should look dry, but will not be brown.)
* Pans should be greased, lined with heavy brown paper (I use grocery bags) & greased again.
When cakes are done, let stand about 5 min. Turn out cakes from pans & peel away brown paper. Turn top side up & brush with corn syrup; cool.
Wrap loosely in foil & store airtight in a cool place - the longer the better.
I wrap mine in a cloth soaked with brandy, sherry, or whatever I have - I might try plum wine this yr. I also prefer to make my cakes 1 yr. ahead. I keep them in the refrigerator during winter & in freezer during summer & take them out again in fall. Good eating.

Assemble the ingredients and let them stand at room temperature for about 1 hour.
Heat the oven to 275°F. Grease two 9 × 5 × 3-inch loaf pans, line them with parchment paper, and grease the parchment.
Cut the dates and pineapple into coarse pieces and combine them with the whole candied cherries.
Mix the sifted flour, baking powder, and salt. Sift the dry ingredients over the fruit, then mix thoroughly so every piece is coated.
Beat the eggs with an electric mixer until frothy. Gradually beat in the sugar. Add the egg mixture to the fruit and mix well with a sturdy spoon.
Add the pecan halves and mix until the nuts are evenly distributed and coated. The mixture will be very dense.
Pack the mixture firmly into the prepared pans, pressing with your palms to fill the spaces. Decorate with additional pecans and cherries if desired.
Bake for about 1 1/2 hours. The exposed batter on top should look dry but will not be brown.
Let the cakes stand for about 5 minutes. Turn them out, remove the parchment, turn them top-side up, and brush lightly with corn syrup. Cool completely.
If desired, brush the cooled cakes lightly with brandy or sherry. Wrap airtight and refrigerate, or freeze for longer storage. Thaw frozen fruitcake in the refrigerator.

2¾ cups all-purpose flour
3 teaspoons baking powder
2 teaspoons ground ginger
½ teaspoon baking soda
½ teaspoon salt

½ cup packed brown sugar
½ cup dairy sour cream
¼ cup light molasses
¼ cup cooking oil
Cooking oil for deep frying
1 recipe Lemon Glaze
Thoroughly stir together flour, baking powder, ginger, soda, and salt. In large mixer bowl, beat eggs till thick and lemon-colored. Beat in sugar, sour cream, molasses, and the ¼ cup cooking oil. Stir in dry ingredients just till moistened. Roll out on lightly floured surface to 9-inch square about ¾ inch thick. Cut into nine strips 1 inch wide. Cut each strip in half crosswise. Shape strips of dough into 12-inch ropes. Fold in half; twist several times. Pinch to secure ends. Fry in deep hot oil (375°) about 2 to 3 minutes or till done. Drain on paper toweling. Dip warm doughnuts in Lemon Glaze: Combine 2 cups sifted powdered sugar, 2 tablespoons milk, 1 teaspoon grated lemon peel, and 1 tablespoon lemon juice. Stir till smooth. Makes 18 doughnuts.

Soft gingerbread doughnut twists flavored with molasses and ground ginger, fried until done, then dipped while warm in lemon glaze.
Whisk together the flour, baking powder, ginger, baking soda, and salt.
In a large bowl, beat the eggs until thick and pale yellow. Beat in the brown sugar, sour cream, molasses, and 1/4 cup oil. Stir in the dry ingredients just until moistened.
On a lightly floured surface, roll or pat the dough into a 9-inch square about 3/4 inch thick. Cut it into nine 1-inch-wide strips, then cut each strip in half crosswise. Roll each piece into a 12-inch rope, fold it in half, twist several times, and pinch the ends together.
Heat the frying oil to 375°F. Fry the twists in batches for 2–3 minutes, turning as needed, until cooked through. Drain on paper towels.
Whisk the confectioners’ sugar, milk, lemon zest, and lemon juice until smooth. Dip the doughnuts in the glaze while they are still warm.

4 cups sifted flour; 1/2 tsp salt; 6 eggs; 1 tsp vanilla; 2 cups honey; 2 T sugar; 2 T colored sprinkles
Set out pan w/oil to heat to 365°. Mix flour & salt in lg bowl. Add eggs, mixing slightly after each. Add vanilla. Mix to make soft dough. Turn onto lightly floured surface; knead. Divide into 4 parts. Roll 1/4" thick. Cut 1/4" wide. Roll into pencil shapes. Cut into small pieces. Fry uncovered 1 layer deep until lightly browned. Drain.
Cook in skillet over low heat 5 min. honey & sugar. Remove from heat and add pieces. Drain and cool slightly. Remove to platter. Shape, sprinkle. Chill.

Small pieces of fried dough coated in warm honey syrup, shaped into a festive mound, and finished with colored sprinkles.
Fill a deep, heavy pan with frying oil and heat to 365°F.
Combine the flour and salt in a large bowl. Add the eggs one at a time, mixing lightly after each addition. Mix in the vanilla to form a soft dough.
Turn onto a lightly floured surface and knead until smooth. Divide into 4 portions. Roll each about 1/4 inch thick, cut into 1/4-inch strips, roll into pencil-thin ropes, and cut into small pieces.
Fry in a single uncrowded layer until lightly browned. Drain well.
Warm the honey and sugar in a skillet over low heat for 5 minutes. Remove from the heat and fold in the fried pieces until coated.
Let excess syrup drain and cool slightly. Mound on a platter, shape into a cluster, decorate with sprinkles, and chill until set.

Light Chocolate Pudding
1 1/2 cups sugar
3 T cornstarch
1/3 t salt
3 T cocoa
3 cups milk
3 slightly beaten yolks
3 T butter
1 1/2 t vanilla
In saucepan blend sugar, cornstarch, salt & cocoa. Add milk. Cook & stir over med heat till thick and bubbly. Cook and stir 2 min more. Remove. Stir some hot into yolks. Return to hot mixture. Cook 2 min. Remove. Add butter & vanilla.

A stovetop chocolate pudding thickened with cornstarch and egg yolks.
Combine the sugar, cornstarch, salt, and cocoa powder in a saucepan.
Gradually stir in the milk until smooth.
Cook over medium heat, stirring continuously, until the pudding is thickened and bubbling. Continue cooking and stirring for 2 minutes.
Remove the saucepan from the heat. Gradually stir a small amount of the hot pudding into the beaten egg yolks to temper them.
Stir the tempered yolk mixture back into the saucepan.
Return the saucepan to the heat and cook, stirring continuously, for 2 minutes.
Remove from the heat and stir in the butter and vanilla until smooth.

Maple Crunch Cake

1 cp flour
3/8 cp granulated sugar
(1/4 cp + 2 T)
3/8 cp brown sugar
1/2 t. salt
1 1/2 t. baking pwd
1/4 cp salad oil
3 unbeaten egg yolks
3/8 cp cold water
1 t. maple flavoring
1/2 cp egg whites (4)
1/4 t. cream of tartar
1/2 cp chp. nuts
Sift dry ingredients into bowl—
make well in dry ingredients. Add
salad oil, egg yolks, water, flavor-
ing in order given. Beat until satin smooth.
Combine egg whites and cream of tartar in large mixing
bowl. Beat until they form very stiff peaks. Fold
egg-yolk batter gradually into egg whites. Fold in
nuts. Bake in a 5 x 10 x 3 in. loaf pan in moderately
slow oven (325°) 50–55 min. Spread cool cake with
Browned Butter Icing:
Melt 1/4 cup butter. Keep over low heat
until golden brown. Blend in 2 cp. sifted pwd.

A maple-flavored chiffon-style loaf cake with brown sugar and chopped nuts, finished with browned-butter icing. Recipe from Mom Loseke.
Heat the oven to 325°F. Sift the flour, granulated sugar, brown sugar, salt, and baking powder into a mixing bowl. Make a well in the dry ingredients.
Add the vegetable oil, egg yolks, cold water, and maple flavoring to the well, in that order. Beat until the batter is satin-smooth.
In a large mixing bowl, combine the egg whites and cream of tartar. Beat until very stiff peaks form.
Gradually fold the egg-yolk batter into the beaten egg whites. Fold in the chopped nuts.
Transfer the batter to a 5 × 10 × 3-inch loaf pan. Bake at 325°F for 50–55 minutes. Let the cake cool completely.
Melt the butter for the icing over low heat. Continue heating until it is golden brown.
Blend the sifted confectioners’ sugar, cream, vegetable oil, vanilla, and hot water into the browned butter. Stir until the icing has cooled and reached a spreadable consistency.
Spread the browned-butter icing over the cooled cake.

MINCEMEAT PECAN PIE
In small saucepan combine 1 pkg. (9 oz.) condensed mincemeat, broken up, 1/2 cup KARO Light or Dark Corn Syrup and 1/4 cup margarine. Stirring constantly, bring to boil. Gradually stir into 3 beaten eggs. Add 1/2 cup coarsely chopped pecans and 1 Tbsp. grated orange rind. Pour into an unbaked 9" pastry shell. Bake in 350°F oven 45 minutes or until knife inserted near center comes out clean. Pour 1/4 cup sherry over filling. Cool.

A rich holiday pie combining condensed mincemeat, pecans, orange zest, and Karo corn syrup, finished with sherry after baking.
Preheat the oven to 350°F. Break the condensed mincemeat into small pieces.
In a small saucepan, combine the mincemeat, corn syrup, and margarine. Bring to a boil over medium heat, stirring constantly, then remove from the heat.
Whisk a little of the hot mincemeat mixture gradually into the beaten eggs. Continue adding the hot mixture slowly while whisking, then stir the warmed egg mixture back into the saucepan until evenly combined.
Stir in the pecans and orange zest. Pour the filling into the unbaked pastry shell.
Bake for about 45 minutes, until a thin knife inserted near the center comes out clean.
While the filling is still hot, pour the sherry evenly over it. Let the pie cool completely before slicing.

Mother Spencer's Nut Cake
½ cup shortening
1 cup sugar
2 eggs separated
1½ cups cake flour
2 tsp baking pwd
½ cup milk
1 tsp vanilla
1 cup chopped nuts
(Double for angel food pan — up to 3 cups nuts. Cook 360° @ 1 hr 15 min.)
Cream shortening & sugar, add egg yolks and beat well. Sift flour and baking pwd and add alternately w/ milk and vanilla. Add nuts and fold in stiffly beaten egg whites.
Bake in a greased loaf pan in a 350°F oven 50 min.

A tender, old-fashioned nut loaf lightened with beaten egg whites and finished with an enigmatic orange confectioners' sugar frosting.
Heat the oven to 350°F and grease a loaf pan. Separate the eggs.
Cream the shortening and sugar. Add the egg yolks and beat well.
Sift together the cake flour and baking powder. Add the flour mixture to the creamed mixture alternately with the milk and vanilla. Stir in the chopped nuts.
Beat the egg whites until stiff, then fold them gently into the batter.
Transfer to the greased loaf pan and bake at 350°F for 50 minutes.

Carrot Cake - Ruthie's
2 c flour
1 1/2 t soda
2 t cinnamon
1 1/2 cups oil
2 c grated carrots
1 t salt
2 t baking pwd
2 c sugar
4 eggs
1 1/2 c chopped nuts
8 1/2 oz can pineapple
Sift together flour, soda, cin, pwd, salt.
Add sugar, oil & eggs - mix well.
Add carrots, drained p., & nuts. Turn
into 3 greased and floured 9" pans,
or 13" pan. Bake 350° for
30-40 min. Cool in pan for
a few minutes. Turn out.
Cool. Frost.

A moist, warmly spiced carrot cake with pineapple and chopped nuts, suitable for either a three-layer cake or a rectangular cake.
Heat the oven to 350°F. Grease and flour three 9-inch round cake pans. Alternatively, prepare one 9 × 13-inch pan.
Sift together the flour, baking soda, cinnamon, baking powder, and salt.
Add the sugar, oil, and eggs to the flour mixture and mix well. Stir in the grated carrots, drained pineapple, and chopped nuts.
Divide the batter among the three prepared round pans, or transfer it to the rectangular pan. Bake at 350°F for 30–40 minutes.
Let the cake cool in the pan or pans for a few minutes. Turn it out and cool completely.
Frost the cooled cake as desired.

Spumone
1. Flavor 1 quart of vanilla ice cream with rum extract. Spoon into mold and freeze until firm.
2. Beat 1/2 cup chilled wh. cream until peaks. Beat in 1 T sugar and 1/3 t pistachio extract, plus 1–2 drops green. Spoon over rum ice cream. Freeze.
3. When firm add 1 maraschino cherry.
4. Beat 1/2 cup cream. Add 1 T sugar, 6 unblanched almonds finely chopped and 1/4 tsp almond ex. Spoon over pistachio cream. Freeze.
5. When firm pour over 1 qt chocolate ice cream. Freeze.
6. When firm unmold and serve.

A molded frozen dessert layered with rum-flavored vanilla ice cream, pistachio cream, almond cream, and chocolate ice cream.
Stir rum extract to taste into the softened vanilla ice cream.
Spoon the vanilla ice cream into a mold and freeze until firm.
Beat 1/2 cup chilled whipping cream until it forms peaks. Beat in 1 tablespoon sugar, the pistachio extract, and green food coloring.
Spoon the pistachio cream over the rum-flavored ice cream and freeze until firm.
Add the maraschino cherry.
Beat the remaining 1/2 cup whipping cream until thickened. Add the remaining tablespoon of sugar, the finely chopped almonds, and almond extract.
Spoon the almond cream over the pistachio layer and freeze until firm.
Spoon the softened chocolate ice cream over the almond layer and freeze until firm.
Unmold and serve.

Squash Pudding
3 squash — cooked and peeled; 2 large eggs; 3 heaping tablespoons flour; 3 tablespoons butter; salt and pepper (curry pwd)
Cook squash (zucchini need not be peeled) and mash if desired.
Blend all ingredients and turn into well-greased baking dish. Sprinkle with nutmeg. Bake at 350° for 40 minutes.

A soft savory baked squash pudding made with cooked garden squash, eggs, butter, and flour, with optional curry powder and a light nutmeg finish.
Trim the squash and cook until tender. Peel other squash if needed; zucchini need not be peeled. Drain very well, then mash if desired.
Preheat the oven to 350°F and grease a baking dish. Blend the squash with the eggs, flour, melted butter, salt, pepper, and optional curry powder.
Transfer to the prepared dish, sprinkle lightly with nutmeg, and bake for 40 minutes, until set and lightly browned.

TRIPLE ICE CREAM BOMBE
1 1/2 cups vanilla wafer crumbs (40 wafers)
1/4 cup (1/2 stick) butter, melted
1 pint vanilla ice cream, softened
1 pint chocolate ice cream, softened
1 pint New York cherry ice cream, softened
Fluffy Chocolate-Nut Sauce (below)
In a small bowl, combine crumbs and butter; press evenly and firmly against bottom and sides of 6-cup mold to about 1/2 inch from top. Freeze.
Spread vanilla ice cream evenly with back of spoon over crumb shell; freeze.
Repeat with chocolate ice cream. Freeze.
Spoon in New York cherry ice cream to fill mold. Freeze.
Unmold by dipping in warm water and turn out onto chilled plate. Serve with chocolate sauce. Serves 10 to 12.
FLUFFY CHOCOLATE-NUT SAUCE
1 pkg. (6-oz.) semi-sweet chocolate chips
1 cup whipping cream
1/2 cup chopped nuts
In a small saucepan combine chocolate pieces and 1/2 cup of the cream. Heat over low heat, stirring constantly, until chocolate is melted and mixture is smooth. Cool. Whip remaining cream; fold into chocolate mixture along with nuts. Makes 2 cups.
This bombe drew raves from my guests, particularly the men.

Combine the vanilla-wafer crumbs and melted butter in a small bowl.
Press the crumb mixture evenly and firmly over the bottom and sides of a 6-cup mold, stopping about 1/2 inch from the top. Freeze.
Spread the softened vanilla ice cream evenly over the crumb shell using the back of a spoon. Freeze until firm.
Spread the softened chocolate ice cream over the vanilla layer. Freeze until firm.
Spoon in the softened New York cherry ice cream to fill the mold. Freeze until firm.
Combine the chocolate chips and 1/2 cup whipping cream in a small saucepan.
Cook over low heat, stirring constantly, until the chocolate is melted and the mixture is smooth. Let cool.
Whip the remaining 1/2 cup cream. Fold the whipped cream and chopped nuts into the cooled chocolate mixture. The sauce makes about 2 cups.
Dip the mold briefly in warm water and turn the bombe out onto a chilled plate.
Serve with the fluffy chocolate-nut sauce.

1/2 c water

Toasted walnuts coated in a cinnamon-vanilla sugar glaze cooked to the soft-ball stage.
Heat the oven to 375°F. Spread the walnuts on a baking sheet and toast for 15 minutes, stirring frequently. Allow them to cool.
Lightly grease a large plate or baking sheet and set it near the stove.
Combine the sugar, water, cinnamon, and salt in a saucepan. Cook over medium heat, stirring until the sugar dissolves.
Continue cooking until the syrup reaches the soft-ball stage, 235–240°F on a candy thermometer. If testing without a thermometer, a small amount dropped into cold water should form a soft ball that flattens when removed.
Remove the saucepan from the heat. Carefully stir in the vanilla, then add the cooled walnuts.
Continue stirring until the syrup thickens, becomes creamy or opaque, and coats the walnuts.
Immediately turn the walnuts onto the prepared plate or baking sheet. Separate them as much as practical and let them cool completely.

CAROB CONFECTIONS
A. Fahlenkamp (?)
Combine 1/2 C. of each:
Carob powder
honey
natural (unhydrogenated) peanut butter
Sunflower seeds
Sesame seeds
1/4 C. wheat germ
1/4 C. soy flour or powder
Form into small balls and roll them in unsweetened coconut crumbs. (over)
This is a healthful snack, rich in vitamins and minerals, low in sodium and high in potassium.
Cookies, Bars & Candy
No-bake carob, honey, seed, and peanut-butter confections rolled in coconut.
In a medium bowl, stir together the carob powder, honey, and peanut butter until evenly combined. Stir in the sunflower seeds, sesame seeds, wheat germ, and soy flour.
Roll the mixture into small balls.
Roll each ball in unsweetened finely shredded coconut.

Coconut Crunchies
125 g (5 oz) quick oats
125 g (5 oz) brown sugar
25 g (1 oz) fine coconut
125 g (5 oz) soft margarine
Mix dry ingredients together in large bowl. Beat in margarine—mix well. Press into prepared greased tin, approximately 11 × 7 inches. Place in 170°C (325°F) oven and cook for about 35 minutes, or until golden brown. Cool 10 minutes, then mark into fingers. Wait until completely cool. Remove. Store airtight.
Makes about 18.

Simple crisp oat-and-coconut bars with a brown-sugar sweetness.
Preheat the oven to 170°C. Grease an approximately 11 × 7-inch baking pan.
Combine the quick oats, brown sugar, and coconut in a large bowl.
Add the softened margarine and mix thoroughly.
Press the mixture evenly and firmly into the prepared pan.
Bake for about 35 minutes, or until golden brown.
Cool in the pan for 10 minutes, then mark or partially cut the slab into approximately 18 fingers.
Allow it to cool completely before removing the fingers from the pan. Store in an airtight container.

Crisp ’n Crunchy Cookies
Marty
1 c. sugar
1 c. brown sugar
1 t. salt
1 t. soda
1 t. cream of tartar
1 c. butter or marg.
1 c. oil
1 t. vanilla
1 egg
Mix all of the above in a large bowl. Blend about 2 min. at med. speed.
Add: 3 1/2 c. flour and beat 1 min. on slow — until smooth.
Stir in:
1 c. rolled oats
1 c. crisp rice cereal
1 c. coconut
1/2 c. nuts
(I just leave these out if I don’t have them.)
Drop onto ungreased cookie sheet. (I find it’s best to form little balls and flatten them with your hands.)
Bake at 350° 10–14 min.

Heat the oven to 350°F.
Combine the granulated sugar, brown sugar, salt, baking soda, cream of tartar, butter or margarine, oil, vanilla, and egg in a large bowl.
Beat at medium speed for about 2 minutes.
Add the flour and beat at low speed for 1 minute, or until smooth.
Stir in the rolled oats and crisp rice cereal. Add the coconut and nuts, if using.
Form the dough into small balls, place them on an ungreased cookie sheet, and flatten them with your hands.
Bake at 350°F for 10–14 minutes.

Gingerbread People
1 cup shortening
2/3–1 cup sugar (brown or white)
1/2 tsp salt
1 egg
1 cup molasses
2 T vinegar
5 cups all-purpose flour
1 1/2 tsp soda
1 tablespoon ginger
1 teaspoon cinnamon
1 teaspoon ground cloves
Thoroughly cream shortening, sugar and salt.
Stir in egg, molasses and vinegar.
Beat well.
Sift dry ingredients; stir into molasses mixture.
Chill (about 3 hours).
On lightly floured surface, roll to 1/8 inch.
Cut.
Place 1 inch apart on greased cookie sheet. Use red hots for faces and buttons. Bake in mod. 375° oven about 6 min. Cool slightly—remove to rack.
Cool. Decorate w/ Confect. Icing.

Cream the shortening, sugar, and salt thoroughly.
Add the egg, molasses, and vinegar; beat well.
Sift together the flour, baking soda, ginger, cinnamon, and cloves.
Stir the dry ingredients into the molasses mixture until combined. Cover and chill for about 3 hours.
Preheat the oven to 375°F. Lightly grease cookie sheets.
On a lightly floured surface, roll the dough 1/8 inch thick and cut into shapes.
Arrange the cookies 1 inch apart on the prepared sheets. Use red-hot cinnamon candies to make faces and buttons. Bake for about 6 minutes.
Cool briefly on the cookie sheets, then transfer to racks. Once completely cool, decorate with confectioners’ icing.

Jule Log (Cookies)
½ c butter
½ c Crisco
2 c flour
1 t vanilla
5 T sugar
pinch salt
* powdered sugar or brown or white sugar, cinnamon
Bake in 2" lengths at 350° until light tan. While warm roll in cinnamon sugar.
(For “butter balls” roll in powder sugar. May add nuts to dough.)

Tender butter-and-shortening cookies shaped as small logs and rolled warm in cinnamon sugar, with an optional powdered-sugar butter-ball variation.
Heat the oven to 350°F. Beat the butter, shortening, granulated sugar, and vanilla until evenly combined. Mix in the flour and salt to form a soft dough. Add chopped nuts if desired.
For Jule Logs, shape the dough into 2-inch lengths. Arrange on a baking sheet.
Bake at 350°F until the cookies are light tan. The original card gives no baking time.
While the log cookies are still warm, roll them in cinnamon mixed with granulated or brown sugar.
Shape the dough into balls instead of logs. Bake until light tan, then roll the warm cookies in powdered sugar.

Keep forever Ginger Snaps
1 1/2 cups marg. (softened)
1 cup dark corn syrup
2 cups sugar
1/2 tsp ginger
1 Tbs + 1 tsp cinnamon
1 tsp cloves
1 tsp cardamom
1 cup heavy cream, whipped
9 cups flour
1 Tbs baking soda
Cream marg., sugar, syrup and spices, till light. Blend in whipped cream. Mix flour and soda. Gradually add to first mixture. Blend well. Put into bowl, cover tightly. Refrigerate overnight.
With small amount at a time roll out to 1/8 inch thick or thinner. Cut with cookie cutter. Bake on lightly greased cookie sheet at 400° for 5 to 6 min. Move to rack to cool.
Makes 25 dozen.
Note—Dough may be kept in fridge for 2 wks.

A very large batch of thin, crisp, warmly spiced cookies made with dark corn syrup and whipped cream.
Cream the softened margarine, sugar, dark corn syrup, ginger, cinnamon, cloves, and cardamom until light.
Blend in the whipped cream.
In a separate bowl, combine the flour and baking soda.
Gradually add the flour mixture to the creamed mixture, blending thoroughly.
Transfer the dough to a bowl and cover tightly. Refrigerate overnight.
Preheat the oven to 400°F and lightly grease cookie sheets.
Working with a small portion at a time, roll the dough 1/8 inch thick or thinner. Cut with cookie cutters.
Bake for 5–6 minutes.
Transfer the cookies to racks to cool.

1/4 c margarine
40 regular marshmallows
5 cups crisp rice cereal
Melt marg. in 3-qt saucepan over low heat. Add marshmallows. Stir until melted and well blended. Remove from heat. Stir in cereal until well-coated. Press into greased 13 x 9" pan. Cool. Cut into squares.

6 eggs

Combine. Mix w/ fingers until well-blended and crumbly. Press into lightly buttered pan.

Tender, crumbly four-ingredient shortbread squares with brown sugar and rolled oats, mixed by hand and baked slowly in a shallow pan.
Heat the oven to 300°F. Lightly butter a 10 × 15-inch shallow baking pan.
Combine the flour, oats, softened butter or margarine, and brown sugar. Work the mixture with your fingers until well blended and crumbly.
Press the mixture evenly and firmly into the prepared pan. Bake for 45 minutes.
Cut into squares while still hot, then leave them in the pan to cool completely.

Peanut Butter Cookies
Beat: 1/2 c. brown sugar 1/2 c. white sugar
1/2 c. butter
Add: 1 egg 1 c. peanut butter
1/4 t. salt 1/2 t. soda
Sift 1 1/4 - 1 1/2 c. all-purpose flour
Add flour to butter and mix in: 1/2 t. vanilla
Roll the dough into small balls. Place them
on a greased tin. Press them flat with a
fork (or leave ungreased). Bake at 350°F
for about 15 minutes.

Classic peanut butter cookies with brown and white sugar, shaped into balls and flattened with a fork before baking.
Heat the oven to 350°F.
Beat the brown sugar, granulated sugar, and softened butter until light and evenly combined.
Beat in the egg, peanut butter, and vanilla.
In a separate bowl, sift together the salt, baking soda, and 1 1/4 cups flour.
Gradually mix the dry ingredients into the peanut-butter mixture. If the dough is too soft to shape, add more flour as needed, up to 1 1/2 cups total.
Roll the dough into small balls and arrange them on a baking sheet, leaving room between them. The source permits either a greased or ungreased sheet.
Press each ball flat with a fork.
Bake for about 15 minutes, until set and lightly browned around the edges.
Let the cookies rest briefly on the baking sheet, then transfer them to a wire rack.

Pecan Bars

Melt 2 sticks margarine
Add 1 C. packed brown sugar
Heat & stir until sugar is dissolved.
Add 1 C. finely chopped nuts (pecans or walnuts)
Cool thoroughly —
Line bottom of 11 x 15 jelly roll pan (or cookie sheet w/ sides) with graham crackers (25). Spoon mixture on crackers (baking will make it spread). Sprinkle with choc. chips (to taste).
Bake 10 min. — 350°
When slightly cool cut into bars.

Graham-cracker bars topped with a brown-sugar nut mixture and chocolate chips.
Heat the oven to 350°F.
Melt the margarine in a saucepan.
Add the packed brown sugar. Heat and stir until the sugar is dissolved.
Stir in the finely chopped nuts, then let the mixture cool thoroughly.
Line the bottom of an 11 × 15-inch jelly-roll pan—or a cookie sheet with sides—with the graham crackers.
Spoon the cooled nut mixture over the crackers. It will spread further during baking. Sprinkle with chocolate chips to taste.
Bake at 350°F for 10 minutes.
Let cool slightly, then cut into bars.

Swedish Shaped Spice Cookies
2 1/3 cups flour
1/2 cup light molasses
1/2 cup shortening
1/3 cup light brown sugar
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ginger
1 teaspoon grated lemon rind
1 teaspoon baking soda
1 teaspoon vanilla
In saucepan combine and bring to boil 3 ingredients. Cook until sugar is melted. Then mix in spices, rind, soda, and vanilla. Cool to room temperature; gradually beat in flour. Chill for 1 hour or until firm enough to handle.
Roll out on floured board and cut into traditional bird and animal shapes or Christmas shapes. Place on greased cookie sheets and bake in a moderate oven (350°) 6–8 minutes, or until done.
Makes about 6 dozen cookies.
Decorate with piped frosting.

Gradually beat in the flour until a dough forms.
Cover and chill for 1 hour, or until the dough is firm enough to handle.

Roll the dough out on a floured surface. Cut it into traditional bird and animal shapes or into Christmas shapes.

Heat the oven to 375°F. Leave the cookie sheets ungreased.
Cream together the butter, granulated sugar, and brown sugar.

Grind quick oats in a blender until powdered, then measure 5 cups.
In a separate bowl, combine the flour, ground oats, salt, baking powder, and baking soda.
Add the dry ingredients to the creamed mixture and mix well. Stir in the chocolate chips, grated chocolate, and chopped nuts.
Shape the dough into golf-ball-size portions and arrange them 2 inches apart on the ungreased cookie sheets.

Walnut Caramel Triangles
Serves: 48
2 cups unsifted flour
1/2 cup confectioners' sugar
1 cup cold marg or butter
1 14oz can swtd condensed milk
1/2 cup whipping cream
1 t vanilla extract
Chocolate Drizzle
Melt 1/2 cup semi sweet chocolate chips with 1 t shortening.
Preheat oven to 350°. In medium bowl combine flour and sugar; cut in marg. until crumbly. Press firmly on bottom of 13x9 pan. Bake 15 min. or until lightly browned. Meanwhile, in heavy pan, combine milk, cream, vanilla. Over med-hi heat, cook and stir until boil. Reduce heat to med, cook and stir (8-10 min) til thick. Stir in nuts. Spread over crust. Bake 20 min til golden brn. Cool. garnish. Chill.

A buttery shortbread crust topped with walnut caramel and finished with a semisweet chocolate drizzle.
Preheat the oven to 350°F.
Combine the flour and confectioners’ sugar in a medium bowl. Cut in the cold butter until the mixture is crumbly.
Press the mixture firmly into the bottom of an ungreased 13 × 9-inch baking pan. Bake for 15 minutes, or until lightly browned.
Meanwhile, combine the sweetened condensed milk, whipping cream, and vanilla in a heavy saucepan. Cook over medium-high heat, stirring, until the mixture comes to a boil.
Reduce the heat to medium and cook, stirring continuously, for 8–10 minutes, or until thickened. Stir in the chopped walnuts.
Spread the walnut-caramel filling over the baked crust. Bake for 20 minutes, or until golden brown. Cool completely.
Melt the chocolate chips with the shortening, stirring until smooth. Drizzle over the cooled bars.
Chill until the chocolate is set, then cut into 48 triangles.
