Small-Batch Veggie Pickles

Ingredients

• 1 qt (4 cups) white vinegar
• 1 3/4 cups sugar
• 1/4 cup salt
• 2 tsp mustard seed
• 1/2 tsp fennel seed
• 1/2 tsp instant minced garlic
• 1 bay leaf
• 1 1/2-lb head cauliflower, cut into about 5 cups florets
• 1 1/2 lb zucchini (about 3 large), unpeeled and cut into 1/4-inch slices
• 1/2 lb carrots (about 3 large; about 2 cups), peeled and cut diagonally into 1/4-inch slices
