Patty’s Enchilada Casserole

Ingredients

For the meat sauce

• 1 1/2 lb ground beef
• 1 cup chopped onions
• 1 1/2 tsp ground cumin
• 4 tsp chili powder
• 1 1/2 tsp salt
• 1/2 tsp black pepper
• 1 cup water
• 1 cup taco sauce

For assembling

• 1 cup taco sauce
• 12 corn tortillas, quartered
• 1 cup sour cream
• 1/2 lb Monterey Jack cheese, shredded
• 1/2 lb cheddar cheese, shredded

Taco-sauce options

• For a mild casserole: use 2 cups mild taco sauce
• For a hotter casserole: use 1 cup mild and 1 cup hot taco sauce
