Ingredients

• 2 lb all-purpose flour (about 7 1/2 cups)
• 1 small cake fresh yeast (about 0.6 oz/17 g), or 1 packet active dry yeast
• 1 tsp salt
• 1 tsp olive oil
• 1 cup warm water, plus more as needed
• Neutral high-heat oil for frying
• Anchovy fillets, drained and cut into pieces, optional
