Name: Zucchini Bread
Yield: Makes 2 loaves
Ingredients: 2 cups grated zucchini; 3 large eggs; 1 cup neutral oil; 1 1/4 cups granulated sugar; 3/4 cup honey; 1 Tbsp vanilla extract; 3 cups all-purpose flour; 1 tsp salt; 1 tsp baking soda; 2 tsp baking powder; 2 tsp ground cinnamon; 1 dash ground nutmeg; 1/2 cup raisins; 1 to 2 cups chopped nuts

A warmly spiced two-loaf zucchini bread sweetened with both sugar and honey, with raisins and plenty of chopped nuts.

Yield: Makes 2 loaves
