Name: Sour Cream Chicken Enchiladas
Yield: Serves 6
Ingredients: 4 cups sour cream; 15 oz canned chicken, drained and cut into pieces (about 1 lb. as noted on the original card); 8 oz mushrooms; 4 oz diced green chiles, drained; ⅓ cup onion flakes; 1 can pitted, chopped black olives, drained; 1 tsp chili powder; ½ tsp salt; ½ tsp garlic powder; ¼ tsp black pepper; 12 flour tortillas; Salad oil or other neutral cooking oil, as needed for frying; 8 oz (½ lb.) cheddar cheese, shredded

A rich sour-cream chicken enchilada casserole with mushrooms, green chiles, black olives, and cheddar. The tortillas are briefly fried to soften them before filling, then the assembled enchiladas are covered generously with sour cream and baked just until hot and melted.
